Put a tablespoon of emeril's essence in half a cup of flour into a plastic bag. Shake the fish up in it. Fry on highish in a pan with olive oil and a pad of melted butter for 4-5 min a side. Walla.

1 cup onions, chopped fine 1/2 cup celery, chopped fine 2 garlic cloves, minced 1/4 cup butter 1/4 cup flour 1 tsp salt 1/3 tsp black pepper 1/4 tsp cayenne pepper 1 1-lb can sliced tomatoes 3 cups water 2 cups hot cooked rice In a deep skillet, cook the butter and flour together over low heat to form a roux. Add the onions, celery, and garlic,and sauté until tender. Add the tomatoes, salt, peppers, and water. Simmer covered for 20 - 30 minutes. Add the fillets and cook until flaky (roughly 15-20 minutes). I would actually double the amount of cayenne, but that's just me. And I usually use fesh tomatoes instead of canned. There are some other pepper possibilities to use instead of or in combination with the cayenne. Up to you.

very true i like my catfish blackened. find a good blackening dry rub and pan fry that bad boy. catfish is awesome. try this 2 tablespoons hungarian paprika 1 ½ teaspoons ground cumin ½ teaspoons crushed fennel 2 teaspoon fresh ground black pepper ½ teaspoon garlic powder ½ teaspoon ground cayenne 1/2tsp onion pwdr 1/2tsp mustard pwdr add a dash of habenero powder salt to taste when its all done rub olive oil all over the fillets and cover them in this dry rub then fry them over a high heat with a little olive oil in the pan. that dry rub will darken and kinda carmelize and its so friggin delicious.

make sure its hungarian HOT paprika. that dry rub should provide a little nose trickle and a possible skull sweat depending on how much habenero pwdr you use, but it shouldnt be an overpowering hotness thats not quite my blackening spice recipe but its close. i fed some blackened pork chops to a friend of mine who thinks mild sauce at tacobell is too hot. he couldnt get enough of it. he was sweating and his nose was running, he was panting and huffing but kept saying "godamn this is some good friggin pork chops. i cant stop eating it even though my face is on fire" lol

sure thing blackend catfish is one of my favorites i like to serve it with rice. i cant cook rice to save my life though so i usually just buy one o them liptons rice side dish things.  stick to a simple one so it doesnt detract from the catfish and can also tone down the heat level when your mouth is on fire.

Catfish is the opposite of salmon. Salmon should be prepared very simply without strongly flavored ingredients but catfish needs a strong sauce or rub or some oil to fry it in. I saw fried and blackened already in this thread. The other thing that comes to mind is using it in indian or thai curry. It is an excellent fish for curry.

Catfish au Lait via one of my favorite cooks Alton Brown. I have made this recipe before and love it. 1 (12-ounce) can evaporated milk 1 teaspoon crab boil seasoning (recommended: Old Bay) 1/2 teaspoon freshly ground black pepper 1 1/2 teaspoons kosher salt 1/2 onion, thinly sliced 3 to 4 catfish fillets Combine the milk, crab boil seasoning, pepper, salt, and onion in an electric skillet (I just use a big pan), cover, and bring to a simmer. Add the catfish to the liquid, spooning some of the liquid over the fillets. Reduce the heat to low, around 140 to 145 degrees, cover the skillet, and poach for 6 to 9 minutes.

Never buy catfish from a grocery store is you have a seafood market close,the catfish they sell at the grocery store are litteraly the worst type to eat.If you have a seafood market near by the types you want go in this order Yellow(flathead,shovelhead,Op,opelousas catfish) Blue catfish Gaftopsail catfish Chanel cats(what you buy in the store). Once you've had them side by side you'll probably never want another channel cafish,but you'll never find the others unless you fish or have a seafood market nearby .

If you've never blackened a fish...look it up and watch a video of someone doing it.

ok...2 thoughts for when you do the next catfish. 1. salt/pepper after soaking in buttermilk, coat with cornmeal and deep fry. 2. season up flour (ur choice after salt/pepper). keep back some of this for the batter. To make the batter add small amounts of beer (or whatever u want) and mix smooth. Once smooth THIN the batter. Make it so thin you think it is ruined. Dredge fish in flour, dip in batter and deep fry. (this makes great bacon, btw) everyone should try the bacon, btw

habenero powder is hard to find. i make my own. its ok, though. it wont effect the recipe at all aside from a hint of flavor and touch of heat. it was a bonus addition i started with my personal blackening spice mix

It was good Sweeny. I think I overcooked it though but the rub was pretty good. I also had trouble finding ground fennel. I only saw the Fennel seeds at the supermarket.

Catfish is delicious but has a strong taste, and as Yuki has pointed out it needs to be cooked correctly or else. Basically you have to have more testosterone than estrogen to enjoy catfish.

buy a coffee grinder throw in a handfull of fennel seeds and push the button. it also works with dried habeneros. crush them by hand first and separate the seeds so you can get more of that habenero-y flavor without as much of the insane heat. if you want to dry out some habeneros place them on something screen-like and let them sit in the oven. i use a mesh spaghetti strainer type of thing.
