Beer and Cheese Soup
|
3 1/2 cups chicken broth
1/2 cup chopped onion
2 cups of beer (I used Lost Coast Stout)
1 1/2 teaspoons of dried thyme
4 cloves of minced garlic (I used 6... I like garlic)
2 cups milk
3 cups Sharp Cheddar Cheese, Shredded
3 Cups American Cheese, Shredded
1 Teaspopon paprika
Add: Chicken broth, onion, beer, thyme and garlic to crockpot. Slow cook on low for 4 hours.
Add: Milk, cheeses and paprika. Cook on high for 45-60 minutes, or until heated through.
Garnish with croutons. (I made homemade rye croutons, just cut up pre-sliced bread into chunks and baked for 12 minutes at 425, stirring once).
It turned out pretty much delicious, the bf and I enjoyed it the night I made it, and my co-workers enjoyed the rest of it the next day. Most said it tasted like a French Onion Soup with a twist.

I was just thinking today that I really want to make something homemade tonight. It's funny you should post this minutes after I looked online for some recipes. I love French Onion Soup so I might have to try this. I think I would replace the cheddar with Mozzarella though.

I made grilled cheese sandwiches with a herb dipping sauce. The bf bought me an Irish Cookbook and I've been going crazy with it lately...
The dipping sauce was simple: 1/2 cup of mayo, and 2 tablespoons of fresh herbs (ie - parsley, basil, etc). I used basil, thyme, rosemary, and some Italian Seasoning.

It should be ready in about half an hour. I know... late dinner! I decided to make it with some freshly baked salmon w/ a bunch of herbs/seasonings and soy sauce because I love fish and can eat it with anything. Can't wait... I'm so freaking hungry.

It was pretty good. I used Guinness because that's the only stout I could find. It did seem to have a bit too much beer taste for me though.
Thanks for the recipe. I'd be curious to see what's in your Irish cookbook, being Irish myself. Shoot me a PM if you happen to find any other really good recipes. I've been into trying different foods and recipes lately.
