Strong stuff. Made with granny smith apples from the backyard, and 3 pounds of blackberry honey. It's dry, sour, and still a little sweet. Perfectly carbonated. I'm sure it's at least 10%. This summer when our red apple tree grows we're gonna make more, and that tree makes about 4x as many apples.

Technically, that's a mead. A cyser, to be specific. Did you just make one gallon? 3 lbs of honey shouldn't be dry or sweet. This should equal a balanced mead. What kind of yeast did you use?

Lol wut. Yeah it's a cyser technically. I made about 3.5 gallons. And honey ferments completely because it's a simple sugar, just raising the alcohol % and barely adds flavor. I used cotes de blancs wine yeast. It makes it dry but still leaves a lot of fruity flavor.

The amount honey used will dictate the residual sugar of a mead even more than the strain of yeast used. You didn't use much honey at all, so it ferments completely. The more honey you use, the sweeter and stronger it will be. If you would have used about 12.5 lbs of honey in that batch, you'd have a sweet mead with about 14-15% alchohol, using that Cote de Blancs yeast.

used to drink some local stuff when I lived in maine. good stuff. a few times I traveled through england i loved the hard cider they served in pubs. it was 14% and it was just savory.
