This recipe may seem alittle long but its well well worth it. If you have the ingredients as left overs its even better/easier. I had chicken and rice with peas last night so I decided to use the left overs today to make lunch for me and the bf. Most all of the ingredient amounts are approximate. If you feel you need more or less of something, then go ahead and do it! What you'll need: 3-4 boneless/skinless chicken breasts 1-2 cups chicken stock(optional) 2-3 small cups of rice 1 16 oz bag of fresh or frozen peas 3-4 pork sausage dogs 3 medium sized eggs(hard boiled) 2-3 tbls Tostitos spinach chip dip 1-2 tsp of oil(I used vegetable oil - not sure i would use extra virgin here for this) 1-2 cups shredded cheese 1/8-1/4 stick of butter 1/4-1/2 cup of cream dried oregano leaves chili powder garlic salt salt pepper First you start out by making chicken and rice(this is why if you have left overs from the day before this is an even better recipe). What I like to do when making chicken and rice is boil the chicken then cut it into bite sized chunks so its easier to eat and more evenly distributed in the dish. Next add your rice and cook it til its all done. This is also where I use the regular salt and pepper and dried oregano leaves to give the chicken some flavor. While you're waiting on that to get done you can go ahead and start boiling the peas and eggs.(not boiling together although you could I would recommend separate pots) While both of those are boiling what I recommend to do is if the pork sausages are frozen nuke them in the microwave for two to three minutes until theyre almost cooked through. Then in a small skillet pour a teaspoon or so of oil and let it heat up then add your sausages. After I took the sausages out of the microwave I cut them on a bias(just so they look prettier and I think theyre easier to eat that way) Brown the sausages then add them to the eggs and peas mixture along with a dash of the garlic salt to your taste. In the pan you cooked the sausages in add the tostitos spinach dip, the butter, and the cream and stir until you make a white sauce to go over the pea salad.(if you want to make a thick sauce you can add flour to it just be sure to cook it a bit longer to get out the gritty flour taste) The last step is pretty easy which is to take out four medium sized soft shell tacos and then in a small bowl combine some of the chicken and rice and the pea salad mixture top it off with a dash of chili powder to your tastes. If you like it hotter add more if you dont then add less. I would recommend no less than 1/4-1/2 tsp. Once that is thoroughly folded into itself fill the taco shells. Be sure not to fill them too full since youll want to be able to close/fold them in a minute. Take your shredded cheese and spread it over the top of the tacos then fold up the tacos and tuck in the sides so the stuffing doesnt fall out. Put under your oven's broiler until the cheese has melted and is golden and bubbly and everything is completely heated through. I like to top the tacos with alittle more to of the spinach dip thats right out of the fridge. The contrast of the cold dip on the warm taco is nice! Enjoy!

Not bad. I like doing Burrito's the Peas are a different touch. Sounds good.

that looks really good. i love rice added to the meat in burritos/tacos even tho it seems weird to put rice inside a tortilla.
