Welcome to the Vault Network
forum archive.
This is not a complete archive, time didn't allot us the
opportunity to properly backup the majority of the boards
deemed "expendable". Most boards on this list have at least
20-40 pages archived (non-logged in pages, 15 topics per
page).
Popular boards may have as many as 250 pages archived at 50
topics per page, while others deemed of historical
signifigance may be archived in their entirety.
We may not agree with how the board shutdown was managed, but
we've done what we could to preserve some of its history in

Looking for a recipe - English Zucchini Cake

Yesterday, my daughters and I had an afternoon tea at a local tea house and they served what they referred to as English Zucchini Cake. I have serious doubts about it being anything "classic" or such. You'd have to have been there but, much of what was served, while very good, was not anything near what we've had in the UK. The scones were cookies, the "Devonshire cream" (which they rhymed with fire) was not anything more than whipped cream. But back to this "cake". It was the consistency of a quiche, definitely heavy on eggs. There wasn't any cheese that I could detect but before I give a go at trying to recreate it with just quiche and zucchini thrown in, I thought I would check to see if anyone here had a recipe for it? I've only found fried zucchini cakes and baked zucchini breads when I've looked online, and this was not a bread consistency, nor cake. There was no discolouration either, just a pale yellow and tender but firm zucchini chunks. I'd appreciate any input from anyone who has had or has a recipe for anything similar.

Just to rule out, I did a quiche with zucchini to try to make this dish and it did not work to be the same consistency. The zucchini held in a great deal of moisture and caused a lot of air pockets in the quiche. I will try again with some flour to see if I can't get a thicker consistency.

Foxy, that was what was odd with theirs, they were big chunks of zucchini, not grated. I tried cooking them a bit on the stove to pull the moisture out but it didn't help. The cake recipe doesn't really look like it consistency wise, but I'll give it a go LoL. I've enough zucchini to feed an army and as long as it's edible, it doesn't really matter if it turns out accurate. I'll just keep trying LoL. Thank you.

When we were over in the UK we stopped at every little hole in the wall and such we could find and I don't think I ever even saw zucchini on the menu anywhere, much less this type of pie. The place we went to last weekend that was serving it was here in FL and very tight lipped about recipes when I inquired. Also though, they didn't pronounce the first thing right and much of it was poor imitation - so I don't know if this "cake" is authentic to English origin or not. But it was realllllly freaking good! I'll figure it out eventually, I'll try this video's version this weekend. Though the consistency in her video is more bread like and that much brown sugar I think will be fairly sweet - which the cake we had wasn't. But no harm no foul!
