It's (almost) always best to have an ingredient at room temp when cookin there are exceptions of course but as a general rule of thumb I try to use room temp unless it specifies cold, such as making pie crust dough and such.

I have done it both ways and haven't noticed much difference.
When I cook, I don't take most of my ingredients out of the refrigerator and let them sit until room temperature before cooking. Haven't noticed many chefs doing that on tv either.
eggs stays in frig
milk stays in frig
cream stays in frig
mayo or sald dress stays in frig
butter stays in frig unless recipe calls for softened
/shrug

Watch Ina, when she bakes she ALWAYS says eggs should warm up Think about it, if you bring your butter to room temp and cream it with sugar (to make a cake per se) then toss in cold eggs and stuff on top ... it drops the temp and makes them firmer again

never noticed much difference in eggs
