Can we have next month's contest posting your best spaghetti recipe? I would love to see alot of different ones posted. I know I already posted mine, and I dont even think I will enter it even if my idea does get selected cause I really dont think its the best so it has little chance :P

my grandmother, I have been on a constant search for a replacement recipe for
her homemade sauce. Sadly, she never wrote it down...

This is my recipe for Sicilian Carrettiera sauce...This is an authentic Sicilian spaghetti sauce named for the Sicilian cart (carrettiera) drivers. This sauce is fresh and flavourful and has a slight bite to it. One thing you will notice about homemade marinara sauces as opposed to jarred is the more vibrant colour and the fuller flavour. I don’t know what it is about the preservation process for canning goods, but they seem to have this ‘old’ taste to them. Nothing compares to a homemade sauce. I tend to use Roma tomatoes for my sauce, they have a better flavour, more condensed. In some grocery stores, these are labeled as ‘plum’ tomatoes. If they aren’t available in your area, you want to select small and firm tomatoes, small enough to almost fit in the palm of your hand and close your fingers around. Ingredients 1 1/2 pounds fresh tomatoes 1/2 cup extra virgin olive oil 4 – 5 garlic cloves 1/2 cup basil, finely chopped* 1/4 teaspoon red pepper flakes 1 teaspoon sea salt, ground 1/2 cup water *If using dried or jarred basil, you will want to dump it into your palms, crushing it by rubbing your hands briskly together before dumping it into the pot. This will bring out more flavour. Directions Fill a large stew pot half full with water and bring to boil. Wash tomatoes and place gently into the water, 5 at a time. Allow tomato to boil for 3 minutes. Remove tomato and allow to sit and cool. Complete until all tomatoes have been boiled. Quarter tomatoes and remove skin and use your finger to loosen and remove seeds as they will bitter the sauce. In a heavy saucepan over low to medium heat, place tomatoes and olive oil in. Using a press, add garlic. Add red peppers, salt and basil. Allow to cook for 5 minutes, then add water. Cover with a lid and reduce heat to low. Allow to cook for another fifteen minutes. Remove from heat. Using an electric mixer on medium to high speeds, beat sauce to a thickened consistency. Serve over selected pasta.

Nom Nom Spaghetti Sauce
4 lbs fresh tomatoes, chopped & peeled
2 medium onions, chopped
4 cloves garlic, chopped
1/4 cup fresh basil, chopped
1/4 cup olive oil
1 teaspoon salt
4 sprigs parsley
1 tablespoon sugar *optional*
2 bay leaves
1/4 cup fresh oregano
1/4 teaspoon fresh grated nutmeg *optional*
grated parmesan cheese
may add tomato paste if desire a thicker sauce *optional*
To cook pasta sauce, heat olive oil over medium heat in a large iron skillet or heavy saucepan. 2 Add onion, basil, garlic and salt. 3 Saute until onion is tender, approximately 5 minutes. 4 Add tomato, parsley, sugar, bay leaves, oregano, and nutmeg; heat to a boil; reduce heat and simmer, uncovered for about 2 hours, stirring often or until sauce has thickened. Add tomato paste if wanting a thicker sauce. 5 Remove parsley and bay leaves. 6 Serve over cooked spaghetti or other Italian pasta and top with Parmesan cheese.

Spicy Tomato Sauce 2.5 lbs ripe tomatoes, peeled, seeded and chopped 1/4 cup olive oil 2-3 garlic cloves, minced 1/2 onion, minced 1/2 Tbsp crushed red pepper flakes 4-5 fresh basil leaves, chopped 1 tsp (or so) fresh oregano, chopped 1/4 cup fresh parmesan cheese Pinch of sugar Salt and Pepper to taste Handful of parsley, chopped I'm basically guessing on the amounts because I don't make this off a recipe. Add the olive oil to a pan and heat over medium heat. Add the onions, garlic and crushed red pepper to the pan. Saute until tender but not brown. At the same time, cut a small X in the bottom of the tomatoes and drop in boiling water for 30 seconds to a minute. Remove and drop in an ice bath. Remove from the ice water after a few seconds and peel the skins off, then cut in half, seed the tomatoes, and chop them up. Add the tomatoes to the pan, as well as the basil, oregano, pinch of sugar and parmesan cheese. Salt and pepper to taste. Simmer for 30 minuets or longer. Add chopped parsley before serving.
