try havarti. it is mild but good.
i also like to add shaved ham (your choice what kind), or a slice or 2 of bacon, but only a little as i think the cheese should be the dominant feature

melt some butter in a small bowl and spread on bread, mix olive oil, basil, garlic, and black pepper then spread on top of the buttered bread  now I want to make one of these, been a while but I don't have bread

Twice grilled.
Sourdough slices, buttered on 1 side of each slice of bread. Cracked black pepper and garlic powder on the buttered sides.
Sharp cheddar cheese in the middle but heres the kicker: On the buttered side you put some grated sharp cheddar as well and press it into the bread. You do this until the other side has cooked in, flip, repeat with the other side. The result is a grilled cheese with an INCREDIBLY crispy and cheesey outside (think the crunchy cheese you get in pizza sometimes) and gooey cheddary goodness in the middle.
Definitely not healthy, definitely tastes amazing.
