I've never made this recipe but it comes from a relative who says it's very good. Pumpkin Bread 1 ½ c Sugar Mix together the following dry ingredients 1 2/3 c Flour ¼ tsp Baking Powder 1 tsp Baking Soda ¾ tsp Salt 1 tsp Cinnamon 1 tsp Clove 1 tsp Nutmeg ½ c Walnuts, chopped Mix together the following ingredients & then add the dry ingredients, starting with the sugar. 2 Eggs- well beaten ½ c Oil ½ Water 1 c Pumpkin 2 buttered & floured 7" loaf pans. Bake at 325 degrees for 50-60 minutes. __________________________________________________________________ This is one I'd probably try first but I just got the cookbook yesterday - Southern Living Christmas Cookbook Pecan-Pumpkin Bread with Orange Marmalade-Cream Cheese Spread Instead of purchasing a lot of separate jars of spices, keep a few versatile seasoning blends, such as pumpkin pie spice, on hand for holiday baking. If you'd like to make your own pumpkin pie spice blend, stir together 2 Tbsp. ground cinnamon, 1Tbsp. ground ginger and 1 1/2 tsp. each of ground nutmeg and allspice. Prep 20 Min Bake 1 hr, 15 min. Cool 2 hr., 10 min. 3 cups sugar 1 cup vegetable oil 4 large eggs 1 (15 oz.) can unsweetened pumpkin 3 1/2 cups all-purpose flour 1 Tbsp. pumpkin pie spice 1 tsp. baking soda 1 tsp. salt 2/3 cup water 1 1/2 cups chopped pecans, toasted Orange Marmalade - Cream Cheese Spread Beat first 8 ingredients at low speed with an electric mixer 3 minutes or until blended. Add 2/3 cup water, beating until blended. Stir in pecans. Pour batter into 2 greased and floured 9 x 5 inch loaf pans. Bake at 350 degrees for 1 hour and 15 minutes or until a long wooden pick inserted in center of bread comes out clean. Cool in pans on a wire rack 10 minutes; remove bread from pans, and cool on wire rack 2 hours or until completely cool. Serve with Orange marmalade-Cream Cheese Spread. Yield: 2 (9 inch) loaves. Orange Marmalade-Cream Cheese Spread Prep: 5 minutes 1 (8 oz) package cream cheese, softened 1/2 cup orange marmalade 1 tsp. grated fresh orange rind Stir together all ingredients until blended. Yield: about 1 1/2 cups.
