Cucumber and Chicken Salad 1 large hot house cucumber, thinly sliced 1/2 c cooked chicken or ham, cubed 1/2 c cherry tomatoes, halved 1 tbsp sweet fresh basil, chopped 1 tbsp fresh lemon juice approx 1/4 c (or less) cucumber salad dressing, tzatiki sauce or plain yogurt 2 tbsp extra virgin olive oil salt & freshly ground black pepper to taste. In a small bowl combine lemon juice, cucumber salad dressing, and olive oil. Add cucumber, cherry tomatoes, chicken and sweet basil. Toss to lightly coat. Season with salt and pepper to taste.

My brother in law always called these 'Greek cucumbers' but my mother in law makes them too and just calls them cucumber salad or 'pickles'. For some reason, the whole family calls cucumbers 'pickles' - drives me nuts. 6 or so good sized cucumbers, fairly thinly sliced 1 medium onion thinly sliced into rings about a cup or so of heavy cream plus vinegar to taste Black pepper Salt cucumbers in layers in a colander and let drain for several hours. Rinse well, then add pepper, onions, heavy cream and vinegar to taste. Place in refrigerator in a covered bowl overnight and serve the next day. Silver

Cucumber Salad My recipe calls for 2 peeled cucumbers and one medium onion sliced, I use a Mandoline vegie slicer. Combine about a cup of Mayo / Miracle Whip with a one or two tablespoons of vinegar and enough milk to make the mix flow like a light sauce or dressing (usually about half a cup). Or you may substitute dill pickle juice for the vinegar and milk, My recipe calls for salt and black pepper and dill weed. I don't always add the dill and you might substitute any herb you like on vegies.

sliced cucumbers sliced white onion (not sweet) white vinegar combine put in fridge in a container you wont mind smelling the rest of its life, or glass ;P not a metal one leave for a few weeks nibble upon! slowly at first if you arent used to vinegar. also is very good for you.

3 pressed garlic cloves
S&P to taste

spicey pickles heat up the brine your favorite pickles come in --- hot enough to kill any germs slice up some cucumbers and jalepenos and drop them in the hot brine --- stick in the fridge for 4-5 days bang ... spicey pickles -- edit -- works well with tomatoes too --- especially cherry tomatoes cut in half
