Here's a video on it. http://www.youtube.com/watch?v=uMPmvFJiM9s&feature=PlayList&p=421C58C07ABA13E3&index=0&playnext=1 I use the well method, make a depression in a big pile of semolina flour, then I add two eggs and slowly incorporate the flour into the eggs. When the dough is formed, I need it by hand five minutes before I wrap it in plastic and put it in the fridge to rest. It takes about 1 minute to cook fresh pasta dough. Drop it in boiling water and when it floats, it's done. I usually don't go beyond 5 on my dough roller. I use a kitchenaid attachment that makes rolling pasta dough a snap. Bought a pasta rack, when it gets here, I'm going to make a big batch then freeze it.

I like making homemade pasta dough too but I need to learn how to make it with wheat flour now. I can't be eating all that white flour, the eggs are bad enough carbs as it is. Silver I found this recipe that doesn't use eggs - I might try it out. Pizzas and Pasta WHOLE WHEAT PASTA DOUGH Cooking Time : : 10 mins. Preparation Time : : 10 mins. Serves 4. Ingredients 1/2 cup plain flour (maida) 1/2 cup whole wheat flour (gehun ka atta) 4 tablespoons olive oil or oil 1/4 teaspoon salt How to proceed 1. Combine all the ingredients in a bowl and knead into a very firm but smooth dough using very little water. 2. Rest the dough under a wet muslin cloth for 15 minutes and use as requried. Tips FLAVOURED PASTA DOUGH : Flavour fresh pasta dough by adding any of the following ingredients to the above recipe :- 1 tablepsoon mixed herbs (parsley, thyme, oregano, chilli flakes) 1 tablespoon crushed peppercorns 1 tablespoon garlic paste 8 to 10 saffron strands, rubbed in 1 tablespoon of warm milk. Tips : For lasagne, the pasta should be rolled to suit the size of the serving dish. For fettuccine, the pasta sheet should be rolled and cut into 6 mm. (1/4") strips

1 egg 1 cup of flour a pinch of salt, pinch of garlic powder and an eggshell of water
mix together and drop by 1/2 teaspoons into any boiling broth (they really swell when cooking)when they float they are done.
I love it in chicken soup in place of noodles. This is a recipe passed down to me from my german grandmother they have a name but for the life of me I cant think of it now lol

When I eat wheat, I'll get really dark circles around my eyes. I just need to be careful and watch what I eat. My son on the other hand is little worse off. I hope he grows out of it. So we are trying to keep a really clean diet right now.
