opportunity to properly backup the majority of the boards
deemed "expendable". Most boards on this list have at least

signifigance may be archived in their entirety.
We may not agree with how the board shutdown was managed, but
we've done what we could to preserve some of its history in
lieu of that.

It's really called Finger Lickin' Mississippi Fish Fry, but I didn't want people thinking it was fried when it's really baked.
Finger Lickin' Mississippi Fish Fry
1 lb. Flounder filets
2 Tbsp. mayonnaise
1 Tbsp. Dijon mustard
2 Tbsp. water
1/3 cup cornflake crumbs
1/3 cup unflavored breadcrumbs
2 Tbsp. toasted wheat germ
1/4 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. dried thyme
Heat oven to 450; lightly spray pan with non-stick vegetable spray. In a shallow dish, stir the mayo, mustard and water until blended and smooth. In a second shallow dish, combine cornflake crumbs, bread crumbs, wheat germ, salt, pepper, thyme and oregano. Dip each filet first into the wet ingredients, then into the crumb mixture; be sure to coat thoroughly. Shake gently to remove excess crumbs. Arrange the filets on the pan and bake 12 to 14 minutes until golden brown and cooked through. Serve with Red Pepper Relish.
Red Pepper Relish
1/2 cup red bell pepper, finely chopped
1/2 cup cucumber, finely chopped
1/4 cup diced tomato
1 Tbsp. finely chopped red onion
1 Tbsp. finely chopped parsley
1 Tbsp. lemon juice
1 tsp. olive oil
1/4 tsp. salt
1/4 tsp. pepper
Combine all ingredients in a bowl and stir to mix well.

It's really not bad. It's not the same as deep-fried fish, but it has a nice crunch and good flavor.

I've tried lots of ways of cooking fish, and I'll try these too, but my favorite way is just to coat them with cornmeal and pan fry them in oil.

I use a mixture of cornmeal, flour, and ritz crackers. I prefer fried fish, but would try this.
