Boards Archive] |
Welcome to the Vault Network
forum archive.
This is not a complete archive, time didn't allot us the
opportunity to properly backup the majority of the boards
deemed "expendable". Most boards on this list have at least
20-40 pages archived (non-logged in pages, 15 topics per
page).
Popular boards may have as many as 250 pages archived at 50
topics per page, while others deemed of historical
signifigance may be archived in their entirety.
We may not agree with how the board shutdown was managed, but
we've done what we could to preserve some of its history in
lieu of that.
Please enjoy the archive.

2 C Yellow corn meal 1 C flour 7t Baking powder 1/2 C + 2T sugar 1/2 t salt 1 Large Egg 1 1/2C milk 3T Oil Put cast iron skillet in oven, preheat to 425F with the skillet in. If you want, sift the dry ingredients together. I do this just to aerate the dry stuff. Think it makes a lighter batter. Mom never did, but I don't cook all her recipes the same way she did. Mix it all up. With the milk, you may need to add more or less to make a batter. Depends on how dry the ingredients are. When the oven is ready, add the oil to the skillet and swirl it around. BE CAREFUL. IT'S HOT. Pour the batter in, bake for 15 minutes, then turn the oven off and let it sit 5 more minutes. Test for doneness by inserting a knife in the middle, it should come out clean. The bread will just plop out of the skillet just turn it over a plate. Serve hot with lots of butter. Cook some beans. Beans and cornbread is a marriage made in heaven.

Just a little sweet. Cut down on the sugar if you want it less sweet.

If I am having cornbread with a pot of beans I like to add about a 1/4 cup diced small small onions and 1/4 diced small small jalapenos with a tsp on jalapeno juice (I use them from a jar, not pickled). Add them in with the rest of your ingredients before baking. If my daughter wasn't such a wimp I would kick it up a notch and put a tbsp jalapeno juice. I do not make the bread I make muffins. Excellent recipe here its exactly what I use with less sugar!

Hmm, I like my cornbread on the sweeter side. Another thing I like to do is after I've poured the batter into the pan is drizzle some honey over the top before I bake it. I don't mix it in or anything and it makes it taste sooo good.

my grandma used to tell me how she would add sugar and milk to it when she was a kid i bet it was that really good milk too, the kind that still had all the milk-fat in it
