Super easy and healthier version of chocolate cake

Another mom made cupcakes for my daughter's Pumpkin Festival in her class last week. The cupcakes were great and she gave me her recipe.
1 box chocolate cake mix
1 can pumpkin
Mix together and bake according to the directions on the box.
That was it. They were very moist. I've heard of substituting applesauce for the oil but I never heard of this before.
She did say it looked a little lumpy after it was baked but it tasted fine and the bumps were hidden by the frosting so they even looked pretty.

That sounds really good! One of the best muffins I've ever eaten was a pumpkin muffin with chocolate chunks, so I can see how this would work.

oh wow so i made these today. the batter was really thick, but that helped with making sure the cupcakes were even It WAS a little lumpy because the batter didn't spread too easily. but oh my god are they delicious. the pumpkin is just a hint of a taste and tehy're not sweet. well they ARE sweet but it's a subtle sweet. and omg are they yummy

Yeah, they are great!
I'm wondering how it would taste if I used a spice cake mix. I think that would be yummy.

Do you use normal solid packed pumpkin or the Libby's pumpkin pie stuff (that already has spices, etc. in it?

The mom who gave me the recipe just used regular pumpkin without the spices. I think either would work if you like the pumpkin pie spices.

This.
I will try this over the weekend. I am also going to throw in some walnuts to it.
Which is awesome, because I got free pumpkins from work (I work at a grocery store), so I have 2 nice sized pumpkins to seed (yum! I love roasted pumpkin seeds) and bake. I don't really care to make pumpkin pie from any other pumpkin than the squash-type (the smaller ones), but I do make pumpkin cakes, muffins, etc from this kind of pumpkin.
Yay for baking!

You know jayna, it would probably be awesome with the spiced cake mix. and you know what else I was thinking. Is that they didn't rise a whole lot, I think my next batch I may just plop a big spoonful on a cookie sheet like drop biscuits. I just used a can of pumpkin stuff -non spiced (can't get the spiced stuff because there are ginger allergies in the house).

I bake muffins for my youngest's wrestling team for their away meets. while searching for recipes for muffins, I found the spice cake and canned pumpkin recipe on allrecipes. Quite a few folks on there posted that they'd added two eggs to theirs, so I did as well.. Came out great topped with chopped walnuts

Ok...
So I made the spice cake with pumpkin muffins and..holy cow, I'm in love! Here's what I did:
1 spice mix cake
2 cups of mashed pumpkin (plain!)
2 eggs
Mixed it together, baked on 350 for 20 mins. Half of the mix I added crushed walnuts. Very good. These would be really good with a cinnamon roll icing or cool whip. It made 18 cupcakes/muffins per box.
Yum yum!!!
