Soups, stews, chili, roasts in the oven or crockpot, squash of every shape and size and apple everything. My husband LOVES apple crisp and the baby could eat apples or applesauce for every snack. I'm the only one in the family that loves squash, though. I share mine with my mom and dad in law because they love it too.
Edit: I forgot - pumpkin pie. It's my family's favorite.

I also love nothing more than putting a soup together in the crockpot and letting the house fill with the yummy aromas! Some favorites (besides pumpkin soup) are chicken enchilada soup and spicy sausage soup. /droooooool

My grandma always made Harvest soup. Beef, onions, turnips, carrots, potatoes, peas and tomatoes in a beef broth. She always served it with homemade sourdough bread. When I make it I always think of her and the time we spent at the farm.

Trader Joe's also sells a Pumpkin Butter that is divine on toast and other breads. I've used it in vanilla ice cream even for the Pumpkin kick! heheheeheh Usually I buy a couple jars of it and use it throughout the year when I need a fix.

Beef and rice casserole is really really hard to make. Pretty much throw precooked ground beef, rice, 2 cans of a cream soup (take your pick of mushroom, chicken, or celery - I prefer a can of mushroom and a can of chicken) and toss it in the oven to bake. Pretty sure there's water for the rice in there too. I'll call tonight and get the recipe and post it. It's not fancy but on a cold day it's delicious.

Beef and Rice Casserole:
Ingredients:
1 lb. ground beef
1 cup uncooked rice
1 can cream of mushroom soup (you can use chicken or celery as well)
1 cup water
1 cup chopped celery and onion, mixed (I like to go heavier on celery than onion)
1/4 cup soy sauce
Directions:
Brown the ground beef and drain well.
Spread rice in the bottom of a casserole dish. Add chopped celery and onions and ground beef. Mix the wet ingredients throughly and pour over the dry ingredients in the dish. Cover with a tight lid or aluminum foil and cook at 350 degrees for 45 minutes - 1 hour until the rice is tender. Add more water during cooking if necessary due to dryness.
I usually make a double batch with 1 can of cream of chicken and 1 can of cream of mushroom. It fits nicely in a 13x9 dish or pan.
