Bone it skin it beat it flat, then I would make up some:
crumbled feta cheese (about 3/4 a cup)
a couple big spoons of mayo
2 garlic gloves
a box of frozen defrosted and drained spinach
Black pepper
(This is for 4-5 breasts)
whirl all together in a food processor
Place a heaping tablespoon of the cheese mixture on one edge of the breast and roll up tie (or use toothpicks) and then place in a lightly oiled baking pan. Bake in a preheated oven 350 for one hour or until no pink shows when the thickest one is cut.
Sometimes at about 45 mins into the cooking time I will brush them with melted butter and sprinkle on some italian bread crumbs
so what would you do with yours?

Wednesday night I threw some chicken breast into a pot with with fresh green beans, potatoes, carrots, onions, rosemary, garlic, chicken bullion powder and some tri-colored vegetable pasta. It was one of the best (and easiest) chicken soups I'd ever made. Both my hubby and daughter loved it, too.

I haven't eaten chicken in forever and the one thing I've craved lately is something from childhood. It's not fancy by any means, but it tastes good.
4 chicken breasts
1 bag of broccoli florets
2 cans condensed cream of mushroom soup
Cooked rice
Put the chicken in the bottom of a baking dish. Pour in the broccoli. Cover all with the soup and bake at 350 until bubbly. Serve with white rice.

Depends on how much time I had to cook, but one of the quickest and easist family favorites is lemon chicken. It also works with dark meat, as most chicken recipes do.
Bone and skin (optional)
Put in a baking pan and top with fresh or crushed dried rosemary.
Pour fresh lemon juice all over it.
Bake around 350 for 20 minutes or until chicken is cooked.
This is great as is, or cut up and put into salads.

For a very quick main course I will put chicken breasts in a shallow casserole dish, mix cream of chicken soup with a little milk and whatever seasons I want, pour over chicken and bake in the over until the chicken is done. The chicken stays very moist and you can use the soup mixture like a gravy.

I don't have a specific recipe, but I do have an approach to chicken breast. I make some type of sauce--whether it's an Italian marinara to an Indian curry to a beer sauce with onions & bell peppers & Mexican seasonings. Once the sauce is done and simmering, I debone & trim my breast. I cut it up into either strips or pieces. I add it to the sauce and let it cook for about 5 min.
As Foxy was saying, white meat doesn't bring a lot of flavor to the party. For me it's all about the tender texture. A lot of recipes bring it in early and you end up with these chewy things. I treat it as if it were seafood.

Combine tomatoes, 1/2 cup of the cheese, the basil and dry stuffing mix; stir just until moistened.
PLACE 2 chicken breast halves in large freezer-weight resealable plastic bag. Pound chicken with meat mallet or side of heavy can until chicken is 1/4 inch thick. I made this up as I went along 2 nights ago:
4 boneless skinless chicken breast were put in a hot pan with about 2 TBSp EVOO
fried to perfection
1 cup minute white rice
1 can 99% FF cream of chicken soup
1 can artichokes
1/2 cup light sour cream
1/2 cup salsa
salt and pepper to taste
simmer until rice is cooked
top with some baked tostidos scoops and 1/4 cup light mexican blend shredded cheese

* 4 boneless chicken breast halves
* 4 tablespoons butter, softened
* 1 tablespoon chopped fresh parsley
* 1 tablespoon chopped fresh chives
* 1/4 teaspon white pepper, or black pepper
* 1/4 teaspoon salt
* 1/4 cup flour
* 1 egg, beaten with 2 teaspoons water
* 1/2 cup fine dry bread crumbs
Blend the softened butter with parsley, chives, pepper, and salt. Divide into 4 portions and chill until firm.
Flatten each chicken breast half to about 1/4-inch thickness by pounding each between wax paper or plastic wrap. Place a portion of the chilled butter mixture in the center of each flattened chicken breast half. Roll each to completely enclose the butter. Dust each roll in flour then dip in beaten egg and water. Roll in bread crumbs then place in lightly greased baking dish. Cover and bake at 350° oven for 45 minutes. Uncover and bake 15 minutes longer.
Chicken Kiev serves 4.

One of my favorites, Chicken Paprikish (as my aunt calls it)
Mix flour and paprika, cut up the chicken, and coat it in the mixture. Brown in Olive Oil. Throw in some sliced mushrooms and onions until the onions are slightly soft. Add white whine, and 2 chicken bullion cubes, and let simmer for about half an hour, adding a touch of water or wine where necessary. Turn off heat, add sour cream, and serve over rice.

I'd fire up the Weber, marinate about 4 boneless skinless chicken breasts in italian dressing, then toss em on the grill. Let em cook a bit, and baste em with more dressing, then let finish cooking until slightly browned and to an internal temperature of 160. Toss a nice salad, get out some bread sticks, and a bottle of wine.

I'd grease a casserole dish with smart balance, put the 4 boneless skinless breasts in the pan with a small amount of chicken broth. Let them bake until almost done, then put some spaghetti sauce over the top and cover, heat that to 160, take them out of the overn and put a generous amount of mozz. cheese on top, stick em back in the oven uncovered so the cheese can melt, and then serve with a nice salad, italian veggies, garlic bread, and wine.

the other night I took 2 bags of frozen boneless chicken breast cut them in to long stips and grilled them on an electric grill. I used garlic, onion powder, paprika, black pepper and oregano on it and browned them nice and crispy on one side. I was going to make some lemon butter noodless as a side dish but everyone had most of it eaten before they were made.
Go figure, I made an awesome finger-food out of it.
