Hasty Bake Grilling with Dad Cooking Class

Last Saturday as a fathers day gift I went to the guys and dads grilling class taught by John Tesar at the Mansion on Turtle Creek Restaurant. It was a beautiful day in Dallas with a light breeze blowing and the trees covering us on the patio.
The menu for the day was:
Smoked Copper River Salmon and Smoked Sturgeon served with Dill Sour Cream and Sturgeon Caviar
Grilled Littleneck Clams and Mussels served with Garlic Butter
Chili-rubbed Smoked Duck Quarter served with Grilled Corn
Texas Kobe Ribeye served with Fennel shavings
Watermelon, Cantoulope and Honeydew Sorbet served in Watermelon Soup
I should have recipes to post shortly and I am definately going to have to try the clams on the grill very soon.

I'd love the recipe for the sorbet and watermelon soup. That sounds so yummy and perfect for a hot summer day.

I bet 20 years ago it was great but it went through some down periods but now it is back to being one of the top restaurants in Texas if not the US

Yeah, back then it was "the" place in the area to go to. There weren't many 5 star restaurants back then so it was a hot spot.
But as you said, it did go down a bit in the 90s as more and more good restaurants started showing up and took some chefs away from the Mansion. It is good to see them establishing themselves again in Dallas.
