I'm going to make some this weekend.
Let's see, rice, tomato sauce, chili powder, hamburger, onions, garlic.
I think that's all Mom put in her's.
Oh, cheese, lots of cheese on top when it's finished.

I put diced tomatoes in mine, Rotel brand works good. I also put in some corn and if I have them on hand, peas. I made some last weekend and it was YUMMMMMMMMM I don't use meat in my recipe though. When I make it, its a side dish for tacos or pollo asada.

Hmmm....very different from my Spanish Rice.
I add diced tomatos (or whole canned tomatos chunked up), onion, garlic and oregano. No meat in it here, either. I have added ground beef to it and french-cut green beans to make it a one-pot dinner, though.

I do about the same as yours but I cook the rice in chicken stock and use diced tomatoes instead of tomato sauce.
Edit: Whoops, I don't use meat in mine, either.

I dont like tomatoes in my rice. I found a recipe that was for "White spanish rice" and I love it.
Saute uncooked rice in olive oil until starting to toast. Add in minced garlic and onion and saute until onion is clear. Add chicken broth, some saffron, and a bay leaf, and steam as usual.

Oooh, that sounds good! I'm gonna have to try it.
Would you just add the normal amount of broth?

Oooh I've never thought to try enchilada sauce in it! I have a little bit left over in the fridge. I should try that before it goes bad. Thanks!

So I made some brown rice tonight and put in some enchilada sauce to compliment my main dish and it turned out REALLY dang good! Thanks Iktome for the suggestion Brown rice can be boring or bland if you cook it with plain water and it really spiced it up a notch, without the added fat or sodium from chicken broth or soy sauce.

Don't worry, I imagine there's plenty of sodium in whatever enchilada sauce you used.

I think it's called Spanish because of the seasonings you use in it.
I grew up eating rice and beans Mom never called it Spanish. She would just boil the rice, the beans
always were boiled with bacon or smoked ham hocks.
Cajuns like red beans and rice. The red beans are boiled with celery, onion, green pepper, and
other seasonings. The rice is just boiled.

"i dont really really know why they call it spanish rice but i eat any rice... rice and beans is a spanish dish right?"
It's Latin more than it is Spanish. Most Latin countries have a form of a beans and rice. In Cuba, we have black or red beans and rice.
