there is typically less marbling in grass fed beef compared to grain fed....and we all know marbling is responsible for a lot of the excellent flavor

Grass-fed animals can still be "grain-finished", meaning the last few weeks of their lives are spent being stuffed with grains, as opposed to grass-fed and grass-finished, which just means they literally grazed their entire lives.

The meat is leaner, and won't have the marbling, but you can get some nice cuts with the fat on the outside. Which, you know, is the way it's supposed to be. tongue

the marbling typically melts when you cook it...so if you are hitting pockets of fat....something is probably wrong with ur cut of meat

I love a fatty steak! I broil it until the fat get's all crispy burnt ish. Then when I take the steak out of the pan I take buttered toast and rub it in the steak fat. OMG YUM

Cows begin their lives in the fields and they are, generally speaking, grass-fed from the beginning. And though that beginning is right, for most...the end is not.
The cows are eventually transferred from the fields where they can graze on their natural diet of grasses to a 'concentrated feeding operation' in which they’re fed a slurry of corn, soy, antibiotics and sometimes even candy. The unnatural living conditions and unnatural diet make them so ill that it is more cost effective to simply treat every cow with antibiotics than on a case-by-case basis.

As the cows are fed on an unnatural slurry, their meat loses much of its nutritional value.
By the time the animal is slaughtered its meat is virtually devoid of those powerhouses of health: Omega-3 fatty acids.
Additionally, the meat of these animals is lacking in conjugated linoleic acid (CLA) which is known to fight cancer. Then there’s vitamin E. Animals in concentrated operations are systematically supplemented with extra vitamin E, yet their meat contains significantly less of the vitamin than the meat of grass-finished animals who never receive such unnatural supplementation.

Grass fed and finished beef has an absolutely superior texture and flavor to that of grain fed.

Yes grass fed is leaner, but that doesn't mean there isn't any fat. There is still plenty of it. Grain fed has way too much, which makes the meat mushy and bland in comparison to grass fed.

It's like the difference between a perfectly prepared porterhouse and a filet mignon that was overcooked and not seasoned at all.

Yes, there will be more texture in the grass fed, you wont be able to cut it with a fork, it wont fall apart in your mouth without chewing.....but it will also taste like beef, not like vaguely beef flavored chicken breast.

What? The marbling is good, it is just healthier. There's no one in the world who orders a steak and just eats the fatty trimming, so I am thinking it isn't the only good part. Like loki said, its mostly the texture. The fattier peices are more moist because grease is dripping through them more as they are cooking, certainly giving them a little more flavor, but it doesn't lose much.

"Eww, you are just throwing that grease away? Dump it back on the steak!!"

You're right, i dont know much about marbling, because all i really know is that when i see it on a cut of meat, i choose a different, leaner cut because i hate fat.
