You'll f*** up a lot but still end up with beer, you'll hate cleaning and you might even quit.

Have fun!

Yeah the f***ing up part is quitting.

I don't think I'll quit, I got plenty of time and I don't mind cleaning at all

I just hope my beer doesn't taste completely bad. Witbier says it was "intermediate" to make, so we shall see. I am excellent at following directions though! It comes in an ingredient kit so I figure that reduces a lot of my chances of messing up the first few times

I'll leave the Chorizo's up to ticky only, I will only try to mimic parts of her, that kind of stuff she can keep

So far every beer that I thought tasted bad has gotten 100x better with age. If they suck, leave them cellared for a few months and just plan to build inventory.

I see, i've heard that a lot on forums on why things went wrong. Usually they were just popped open before they were done

Nice. I'll be sure to. I think I might get another fridge pretty soon if space becomes an issue. How many cases of bottles do you think come from one brew? I've been collecting bottles and I ordered 24 bottles as well

do yourself a favor -- get the 22oz bottles, you'll thank yourself later for the following reasons

1. no one drinks just one 12 oz
2. less bottles = less cleaning

So true... no matter how bad you think you f'd up finish and let it ferment out then store it somewhere and forget about it. It is a hobby that you will get better at with experience and you can drink the results; how cool is that?

Witbier kit was a bad choice for first time. You won't know if it's just bad tasting or you effed it up.

I've tasted batches gone wrong that taste like a maybe okay witbier.

I have no idea if this is true, but I think the majority of bad homebrews are from bad sanitizing and gets infected, the forums are probably different because most of them know to sanitize well, and just opened the bottle it too soon.

Fermentation temps are usually a bigger issue than sanitation. Overall though the process is pretty damn forgiving, which is a good thing. Mistakes like sanitation, fermentation temps, boil times, etc usually won't totally ruin a beer you just won't end up with something awesome. There are so many variables but the actual process is fairly simple and, as mentioned, forgiving which makes it a great long term hobby... for me anyway.

I am hoping for the best, I'll be sure to make sure it is really sanitized and also watch the fermentation temp very often. I have a place I am gonna put the fermenter that is pretty consistent (in a cabinet) so hopefully that will be good enough to not make it completely crappy :P

Whatever you do, don't chill the beer while it's fermenting and then store it in a closet somewhere. That'll eff it up too and make it sour. We had a lot of idiots call and bitch their beer was bad months later when they were just storing it wrong. They came back and brewed another 12 gallons plain

I didn't work at a brewery, so I know nothing.

Could for sure. I just looked that up, didn't know about that. Can do that with a fermenting tub and then into a bottling tub? I have a fermenter, a bottler tub and a plastic carboy coming

6.5 Gallon Ale Pail Primary Fermenter with Drilled and Grommeted Lid
6.5 Gallon Ale Pail Bottling Bucket with Bottling Spigot
5 Gallon Better Bottle Carboy

I don't know, lots of forums say it doesn't make a difference, while some many have also suggested plastic over glass

It is personal preference between glass and plastic (pail or better bottle). There are differences but nothing that will affect your brew as long as you treat them properly. I use glass but if I need more containers I'll be getting plastic. I love my glass but it is much heavier and an accident can land you in the hospital getting emergency surgery or at the very least stitches.

That's a good reason to stay away for sure :P part of the reason why I went plastic was because it was cheaper in cost and in shipping (yay) but also because one of the forums one guy was talking about how his broke when he was moving it and needed to get stitches pretty much all over his feet
