You have to hang it up and gut it and get the blood out before it goes bad. then chop it up for the freezer.

What are you hunting?

Large game you will typically gut where you shoot it so you don't have to drag out the extra 50-100lbs. Gutting is pretty basic. No real right or wrong way to do it, given you have some common sense. You don't want to stick your hand up a deer's ass or down it's throat to pull the guts out, of course. Just cut the belly open lengthwise and pull out the steamy, stinky stankness.

Small game is a bit different. Basically you want to cut a slit somewhere on the top/back of the critter and peel the skin off after you gut it. A squirrel, for example, is skinned by cutting a big enough slit from side to side across the shoulders to where you can get a few fingers in on each half and then pull back, lengthwise, until the skin is down to the last joints on the legs, at which point you hack off the legs at the joint and are left with the final product before you wash it, soak it and then cook it or freeze it.

Lots and lots of guides online if you look, but experience is by far the best way. Methods vary by region I have found.

If you're doing a deer it's probably best to either let someone who knows what he/she is doing guide you through it (best option, so that you can eventually do it yourself...) or take it to a butcher and let them do it all.

edit: And be sure you like the taste of what you're hunting. nothing worse than hunting something and finding out you hate it, then wasting the kill. Squirrel is pretty gross imo. I quit hunting them years ago when my grandfather no longer wanted any... I used to just hunt them a few days a month to give to him for his freezer 'cuz he liked them. Rabbit is decent if done right, especially BBQ'd w/honey. My faves are venison and pheasant. Love 'em and could eat them all the time. Grouse is good. Elk is an acquired taste, to say the least, as is most large game. Buffalo is pretty good.

Get the guts out with out exposing the meat to the fluids in the guts as it will destroy the meat.Skin it as quickly as possible.Skin and hair are a bacteria a farm and the quicker you get them off the meat the better quality the meat will be.


If you have never done it ,be prepared for the smell when you cut into the gut cavity..it won't be pleasant.

so im going to need to find a butcher, with out a long line, who can butcher my bambi right on the spot.
no throwing it on the roof of the car and bringing it a couple hundred miles to get it butchered?


im going to VAginia and make my little sister deal with the details of shipping me the animals i murdered

Ummm... what? I'm curious-as a purchasing agent for a kitchen, can I kill stuff and have someone ship it to me cheaper than if I buy stuff other people already killed?

what kind of license do i need to have her pick it up at the butcher and send it to me?


as far as i know its illegal to sell venison and game meats on the open market.

dont you need a special license to acquire game meats from local hunters, or on your own, and then sell them in your restaraunt or distribute them to clients?



i think you are trying to step outside the real of typical hunter/eater and excuse yourself into distributing illegal game

Depends on what your hunting. But first tag it, drag it, gut it, skin it and cool it as fast as possible. Good meat can go bad fast. So get some ice in the cooler and get that meat cooled down before you take it home for the freezer or to the meat locker.

I started hunting this past year, and it was a great experience. Learned alot from other people, reading, and from being out in the woods.

Wool gear will be on sale early summer, and looking to jump on those prices.


I think every man should learn how to hunt wild game, if anything, it's a good idea to at least be able to provide food for the family in an emergency situation.

That and Vermont has an active hunter community and a great youth hunter program, so when my kids get a few years older I will be able to take them hunting as well.

Looking forward to this year's hunt.

I don't know how anyone can do that. I know people do (I grew up in WI after all) and I support their right to do so for a variety of reasons.

I could not do it though. I could not hurt that creature, nor would I want to.

Hunting should be legal of course but I just dont get the attraction

i hear ya. i've been a life member of the NRA since i was a kid.
with that comes a magazine every month. the one i get is about hunting.

so i've been reading about hunting for about 20 years, but have never done so.
i probably know more about it than most non-hunters except for maybe wives grin

in addition to getting to shoot animals IN THE FACE, it is a very intimate
commune with nature. the conservation aspect has brought several animals,
such as elephants, back from the brink of extinction.

i'm in it for the skulls and the noms. the guys i posted above are highly
ranked on venison.com drooling
