i prefer medium rare. half the time it shows up medium well though and i get annoyed and send it back...i'd be much happier if it showed up closer to rare but its always the other way around for me. i've decided to just make a point to tell them if the cook has to error make sure its on the rarer side.

wow guess Im in the minority here but I like my steaks/meats well done...not so afraid of bacteria is I just dont like blood and stuff running out of the meats Im trying to eat.  Its like you're hacking into that poor animal after its already dead. lol  If you like it rare or w/e more power to ya I just cant eat it like that happy  Maybe its a southern thing?  idk I rarely ever saw anyone order a state rare or medium rare.  Medium well was rather rare too.  I would notice waitresses would ask, "well done?" if ordering a stake like it was the norm(since it seemed to be)

Well done or else I get an allergic reaction. I don't bother ordering steaks when I'm out, they always start it at medium, forcing me to send it back. Plus they always end up leaving the juices all over my plate, and I still get the reaction because most of them give me back the same bloody plate. So ordering steak is just a battle with the chef/server.

I've ordered it "Burn the crap out of it and if there is any blood on the plate I'm sending it back." Still got medium.

especially if it's a big steak, because then the middle will most likely be closer to medium-rare.

I can go either way one level (medium well or medium rare), but beyond that and I don't want to eat it. Although, I can't think of a time I have ever sent a steak back...

We have some family friends that eat at our house pretty regularly, and NONE of them will accept any kind of beef if you can see red at all (it's 5 people). They are the pickiest eaters I have ever seen, and after one nightmare day cooking hamburgers (had to re-cook them like 3 times because they kept getting like medium well instead of well done)...I don't ever cook when they come over if it's something beef.

From those pics, I would prefer a middle ground between medium well and well done, but I chose well done because I only got one vote.


In my younger days, I used to eat stuff very rare, I can not stand that anymore.

Better the cut the less I want it cooked, will go anywhere from Rare to Medium depending. Cooking any sort of steak more than medium is wrong.

I always order it medium rare, that way it will be done the way I like it, if under cooked, thats fine, if over cooked to medium, thats fine too.

I like blue rare, but it grosses my wife out...lol

The definitions have changed over time... Medium of old was medium well today. Medium Rare of old is now Medium.

In the old days where Medium Rare was pink, I used to be MR-R... Now where medium rare tends to be RED I am more MR-M.

Based on your pictures, I would want something a little more cooked than the medium rare but not so much cooked as the medium.

I do not like chewy meat but I want a lot more pink than 25%.

I like the center just about to turn with 66% pink. Say 130F.

Medium rare to rare, though I rarely order steaks outside of Brazilian places. Too damn expensive for something cooked so easily...

PS
The red liquid is water and protein from the muscle. Any macroscopic levels of blood are washed out during butchering. Either that or chickens and pigs lack a blood supply.

So just pretend it's Kool-Aid and drink up; some of you are pretty good at that.
