Cook your pasta (whatever type you prefer, I like Conchigliette or Capunti)
Cook a diced onion in a bit of oil for a few minutes
Add flour slowly to the pan until all the oil is absorbed and you have a nice roux
Continue to cook until the roux is golden brown
Add milk slowly, stirring constantly, until you have a nice thick sauce
Slowly add in 1 bottle of dark beer, stirring sauce until all bubbles are gone
Stir in grated cheese, whatever kind you like (I prefer a mix of sharp cheddar, Parmesan, and Stilton)
Once the sauce is smooth and creamy and no lumps of cheese are left, turn off the heat
Pour cheese sauce over pasta in a casserole dish, top mixture with crushed ritz crackers and blue cheese
Bake at 350 for 20 minutes.

Killer recipe here. I'd personally sub in some sort of smoked cheese, maybe gruyere or gouda for the parmesan and stilton and reduce the beer to about half a bottle (and drink the other half while I make the dish).
The Alton Brown recipes I linked above will likely be a bit bland if you're used to the sodium-out-the-ass mac & cheese in a box. So if you make one of those you may want to spice it up a bit here the way Ptilk has suggested, and of course, adding bacon is a can't-miss move too as I noted above.

Hers starts on the stove, ends in the oven, and is better than what my Grandma (sorry Grandma) could ever come up with. No Velveeta, she uses sharp cheddar and makes a reaux (sp?) out of the same.

Whenever she makes it, I have a defibrillator close by and I'm not above pushing my dad or my kids out of the way to get to it. 
Also, are you still playing TOR? We are probably about 2 weeks from giving it a shot.

I'm playing on Whiterun. its low population so its easy to not suffer from queues and jackholes and whatnot but its not so great for finding groups in.
