Not, "How do you cook salmon," but "How do YOU cook salmon?"

Also, what kinds of marinades/sauces/spices do you use?

I know lots of people grill it but I'm mostly looking for oven recipes.

no sauce as i prefer to have the taste of the salmon, not the taste of whatever sauce.

I don't care for dried out fish and I want it to cook evenly, which is why I use the foil. It also helps with the strawberries and onions doing their job. I learned this trick from a children's camp chef, she used the method because kids so often say they hate salmon. I also didn't care much for salmon before I tried it this way.

Salt
pepper
olive oil

In oven. 350 for about 20ish minutes?

I cook some pretty bomb Salmon.

One of my tastier (albeit less healthy) recipes:

Mix together some Mayo, a spoon full of minced garlic, a spoon of brown sugar and lemon juice.

Rub that all over the salmon, bbq until done. Absolutely delicious.

I slap it in a pan with a spash of lemon, onion slices, and small chunks of mango perhaps. Then i Bake at 350 until it looks cooked happy Not sure 20 minutes? I don't look at the clock really... Sometimes i just do salmon and onion, baked.

However, I've slapped it into a skillet with a little oil (which always splashes and gets psycho and nearly burns the house down every time...) Pan lid required...until the outside gets nice and crispy and it falls appart trying break off chunks. If it's not raw on the inside, it's ready to eat! happy

I eat onion with everything...

I do not put anything on my salmon and I do like it. You can tell how much someone doesn't like fish by how much stuff they put on it. My wife and I are similar on fish. We both rarely put anything on it because we want to taste the fish.

you claim because I prefer the taste of salmon with strawberries and onions, because it cuts down on the flavors I don't care as much for, that I don't like salmon. The same can be said for anyone who puts anything on it, like lemon, butter, olive oil, salt pepper... these things ALL change the taste somehow, otherwise WHY WOULD YOU USE THEM?

I really don't want to get in the middle of your argument with Jezza, but I totally get what you're saying. My husband loves tartar sauce and I don't get it. I want to taste the fish. He seems to like fish more than me, though, so it's totally confusing.

I start there. Then I will throw in whatever fits my mood at the time. Ginger, smoked paprika + cumin, honey, dill... whatever. I always start with a cedar plan, a lemon, some olive oil and some fresh cracked pepper, though.

Lots of good advice in here.

A crispy top to the salmon doesn't mean the whole thing is dry... there's a way to make it where the top part is slightly crispy but the inside part is just cooked... all buttery soft.

Most recently, we've been using the broiler at the bottom of the stove to accomplish this.

Yes, I agree. There's a difference between putting spices on a food to get rid of the bad flavors of the food and putting spices on the food that will enhance the flavor of it. It's like adding mayo to a turkey sandwich or ketchup to french fries. (Or ketchup on steak but I probably shouldn't admit this.)

No, my beef isn't about my choice of seasonings, my beef is that he thinks he's the almighty god that has the right to tell someone they don't like something because of the way they prefer that it's prepared. Salmon has good flavors and bad flavors to it, if you don't realize this... maybe you should stop eating so much god damn salt, or quit smoking... or whatever it is that has caused defect to your taste buds. Using Onions and Strawberries changes the chemistry of the salmon when it's cooking, it's not a "cover up" like using a bunch of garlic is.

You're right, I'm not buying good salmon, I'm catching it myself.

I get Atlantic Salmon.

-I get a big piece of tin foil and put it in a pan.
-I put a table spoon of garlic butter in the middle of the tin foil.
-I put the salmon on top of the butter, in the middle of the tin foil.
-I put salt on the top of the salmon.
-I put more garlic butter on the top of the salmon
-I fold the tin foil "up" around the sides of the salmon and then mostly fold it around the top, but not closing it in on top entirely as I want the heat to hit it and crisp it, not boil it.
-I cook at 425 for 30 minutes

Done.

Heat oven to 400 degrees.
Spray baking dish with cooking oil.
Rinse salmon and pat dry, arrange in baking dish.
Brush with mayonnaise seasoning mixture. (Mayo, grated lemon rind,onion powder,tarragon,dill weed, lemon juice)
Bake it till flakes.

It's not as bad as you think. Most of it cooks off. I do the same sometimes without the sugar and lemon juice.


You should try it. I think it adds some pretty good flavor.

Soak a cedar plank for two nights in water and lemon juice. Wrap this plank's bottom in foil. Place Salmon on the plank, and the plank on the grill at about medium and bake it. Lemon slices, garlic, olive oil, black pepper and finishing salt. I'm from the pacific northwest and a family of fishermen, so I eat a lot of salmon, and this is far and away my favorite way to do it.

I coat it with olive oil and sprinkle with lemon pepper, sometimes I'll put thin lemon slices, very thinly sliced onions, julienned zucchini and julienned carrots on the top and bake inside foil at 400 degrees or so for about 15 minutes or until flaky. Turn it all out onto a plate and you have an entire dinner.

Smother with minced garlic and butter. Then pour some mango chutney over the top of it. Sprinkle a generous amount of fresh grated Parmesan cheese over all of it. A small pinch of basil and then wrap in foil, making sure to tent over the top of it. I usually BBQ it. Make sure you dont over cook the fishy.

I start there. Then I will throw in whatever fits my mood at the time. Ginger, smoked paprika + cumin, honey, dill... whatever. I always start with a cedar plank, a lemon, some olive oil and some fresh cracked pepper, though.

No, my beef isn't about my choice of seasonings, my beef is that he thinks he's the almighty god that has the right to tell someone they don't like something because of the way they prefer that it's prepared. Salmon has good flavors and bad flavors to it, if you don't realize this... maybe you should stop eating so much god damn salt, or quit smoking... or whatever it is that has caused defect to your taste buds. Using Onions and Strawberries changes the chemistry of the salmon when it's cooking, it's not a "cover up" like using a bunch of garlic is.

You're right, I'm not buying good salmon, I'm catching it myself.





My BS meter is through the roof here. I like how you tell him if he likes all the flavors in salmon he has defective taste buds. And don't get into the chemistry BS, it works the same for pretty much anything you choose to put on it, so on that note you are just wrong. Strawberries are a little acidic, so it works like lemons. Salmon, to people who like salmon, doesn't have bad flavors. That's what liking something means, it means you think it has good flavors.

There are things i dont like, and i admit I dont like them unless i mask some of their flavors. There is nothing wrong with that, i hate grapefruit, sometimes it works well in drinks if the taste has been obliterated, but I wont say i like it.

Salmon I eat raw usually. I think it is fantastic raw, otherwise i just put the slightest amount of butter on it and bake it in tinfoil, so when it comes out, it tastes like salmon, because, ya know, i like the flavor of salmon
