I have been brewing mead (as well as beer) for about 7 or 8 years now. Its hard to get the basics right, but then it is easy and cheap. 99% of the store bought meads are garbage.

I brew Mead. 1lb Honey per Gallon if you like it dry like white wine. 3lb Honey per Gallon if you like it sweet with alot of honey after-taste on your lips. I use local Desert Blossom Honey so its not as expensive. Hard part is fermenting and aging. 6-10 Months is too short to ferment. I let mine ferment for 1 year, then rack and bottle for another year.

http://www.redstonemeadery.com/ Dunno if you can get that where you live. Most are pretty bad, but this meadery has a few good offerings. And as to fermentation and aging times, it really depends on what kind of mead it is. I generally advise orange blossom or killer bee honey because they are the easiest to balance when making melomels (fruit mead) or metheglins (spiced mead)

Mead is still popular in certain circles and is regularly served at fine opera houses during the intermezzo along with dry sherry.
