This morning they were completely defrosted and just slightly cooler than room temperature. Can I still use them? They are fillets, so they are definitely worth at least some risk of death by shitting and puking.

I don't think it's because of the meat breaking down. It is because there are always bacteria in the meat like salmonella in small amounts and perhaps e-coli, not enough to hurt you but it's there and when the food is warm the bacteria start to propagate very quickly to numbers that can be deadly..

So predictable you are..

This only happens with large scale cash crops adjacent to meat farms, the run off from the meat farm gets into the crop and absorbed by the crop, if there is e-coli in it it gets into the produce.

Eat organically grown crops from small producers, locally grown if possible and you will almost never have this problem.

But you knew this of course..

I will just sear the shit out of them in an iron skillet then oven finish them to a little under 160. That's a lot more well than I like fillets, but it was the only pack of them we got in our grass fed beef share and I really hate to waste them.

I've done the same thing from time to time. I don't worry about it unless it's getting beyond 24 hours or they're unwrapped. I mostly cook chicken or ground turkey, though, so if there's pink in the middle I'm doing it wrong.

You guys sure are touchy about your food.

It's steak, you can let it sit out at room temp for a day or even longer and it can be just fine. Just wash it and trim off any parts that look shiny or dried out. The meat will actually taste better than the same cut taken directly from the fridge to the stove. I like to leave steaks out for a good 3 or 4 hours before I cook them and usually do.

I'm no advocating leaving steak sitting out all day, but it's not that big of a deal if it happens.

You'll be fine. It was originally frozen so it's probably only been room temperature for a couple hours. You might want to cook it a minute or two longer if it makes you feel better but seriously I wouldn't worry about it. If it was contaminated leaving it out a couple hours is very unlikely to matter; you'll get sick or not either way. If it wasn't contaminated to begin with it isn't gonna have been long enough for anything to really start growing.

Yeah, I know all about that. I've been certified by a lot of different food service and government agencies in safe food handling requirements. I understand why they have those super strict limits and I think that they should. It's idiot proof and covers just about any crazy scenario out there.

That doesn't mean that you have to pay attention to them in your home however. If your kitchen is clean, the meat you buy is from a reputable source, and it's covered, there is no reason to worry about a few hours at room temp or even a day.

Lots of food items don't really need the careful handling at home that needs to be required in their production and transportation. Hell, I don't refrigerate eggs at all at home. Makes them taste like crap. I keep them for a couple of days at room temp and have never had a problem.

Those guidelines are set to be valid for the person who has weeks worth of fast food containers lying around their house with flies buzzing around.

People who are paranoid about bacteria crack me up. There are so many better things to be paranoid about. Getting in your car to go rent a video is probably 10x as dangerous as leaving your steak out for a few hours.

If you want to avoid the problem going forward, stop thawing your food at "room temperature". You can thaw a whole chicken that was frozen rock solid in about 2 hours floating in a sink of cold water. A few filets, probably thaw those in less than 30 minutes. I am assuming your food is wrapped in airtight plastic obviously - you don't want to waterlog it.

If it's just wrapped in butcher paper or something, first, learn 2 freeze food, second let it thaw overnight in your refrigerator, sitting in an aluminum pan. A whole chicken will take several days to thaw in the fridge like that but still, much safer and preferable imo to letting it sit out on your counter.

If you MUST thaw it at room temperature and can't use water, do so in an aluminum pan for a few hours, it will thaw faster than just sitting on your counter or in a glass stoneware baking dish or whatnot.
