Yeah it's cow stomach. Basically, he cleans it, boils it, washes it then cooks it more with the flavor he wants on it....I think he's making it curry flavored.

Apparently tripe stinks while cleaning and cooking because there's usually still some bits and remnants of undigested food still in there...gross.
The one time I recall seeing someone eat tripe it looked like flat honeycomb, like this:
