The SO's family is from Hungary. His grandparents came over during WWII. Last night, his mom taught me how to make Chicken Paprikash the way his grandmother made it. It was pretty yummy. She doesn't have a written-down recipe, but here's what went into the big soup pot.

Vegetable or Olive Oil
Couple tablespoons or more of Hungarian Sweet Paprika
Couple tablespoons of parsley
One chopped red onion
S&P
Chicken thighs and/or breasts
Chicken Broth (two boxes)
Carrots (probably half or a whole bag, peeled and chopped into rounds)
6 Peppers (green, red, yellow, orange....any color, but the sweeter the better - chopped roughly)
2 Tomatoes (roughly chopped)

Combine the oil, paprika, parsley, onion, salt and pepper and cook until the onion is translucent. Then add chicken thighs and/or breasts to the pan and about 1/2 box of chicken broth. Cook until the chicken is mostly cooked through. At that point, you can shred or chop the chicken into bite-size pieces. Then add the rest of the veggies and the rest of the chicken broth and cook about an hour or so.

I would probably have added a couple cloves of garlic in with the onion, but she hates garlic.

Serve over hot, buttered noodles. I won't even attempt to guess the amounts of flour, salt, milk and water she used to make spaetzle, but they were good. I'd probably be far too lazy and buy pre-made noodles at the store when I make it myself.

Yeah, I think it would be fine in the crockpot. Just add the noodles when it's done.

I love chicken paprikash. I love it with pork even more.

I make it at least twice a month.
