Subject: Anyone know a good way to powdered sugar something?
I was making these really simple doughnut fried pastries the other night and it was my first time trying to roll something in powdered sugar. I added them to the sugar as they came out of the grease thinking they would cling to the pastry since they were "wet" from the oil still. They basically just got all clumpy and wet and it didnt turn out like I had planned sad

Anyone got any tips?

you cant do anything in powdered sugar while hot or wet.

think of a powdered doughnut in a package. if that package gets moist, think about what happens. same w/ heat, the sugar will just disappear.

set the doughnut on a wire cooling rack, let them cool a tad. not saying they must be cold, but not blistering hot, just warm.
then you can either dust them, or fill a lunch sack about a 4th to a 3rd up, dump in a few depending on size and shake.

what foxy said or another way would be to get a bowl and fill it up some and then flip the top of the doughnut in and then remove it
