1. Everything Heinlein ever wrote. He has a few different modes of writing, some are for young adults, some are creepy old man stuff from later in his career, and then the bulk is out and out Sci-Fi - essentially all of it is good.

2. Ender's Game. Everybody loves this, can't go wrong. Rest of the series sort of blows.

3. Hyperion Cantos. In my opinion, the best sci-fi ever written. The first book is a touch slow for some people but still great. After I finished the series I was emotionally depressed because it was over and I didn't want it to end.

4. Dune. Another classic. Herbert was a genius, the stuff his kid wrote is OK if you end up being a fan of the series.

All great suggestions, but yeah, Heinlein is the grandmaster. Can't go wrong with him if it's his pre-80s stuff. His 80s stuff was just weird. (His career covers 1948-1987 btw). Some good ones to start with; The Moon is a Harsh Mistress (my personal fav), Stranger in a Strange Land, Number of the Beast, and Friday.

Also, what kind of sci-fi? Hard sci-fi or Soft sci-fi? Examples of hard sci-fi would be Ender's Game type stuff and soft sci-fi would be things like Terminator or Matrix...basically stuff that mixes some real world with elements of sci-fi.

*edit* Dune is probably the best sci-fi book ever written, but the series makes a rapid nose dive after that. Children of Dune was ok I guess, but everything after that... sick

If you liked Jack Vance's Demon Princes series (great stuff by the way), don't stop there- he has plenty of other books and series to read:

http://www.fantasticfiction.co.uk/v/jack-vance/

Alastor is an excellent collection of 3 short novels.

Changing authors, Blindsight by Peter Watts is a fist-rate alien contact novel that came out a couple of years ago with a unique style. Plus, how can you resist the captain of a spacecraft that is a vampire?

I really enjoy reading David Weber and his Honor Harrington series. His books are more military sci-fi. It's not very in-depth and original but, to me, it's a decent read to get away from the real world for a little while.

Requiem for the Conqueror: Forbidden Borders, book 1. It's about as hard sci-fi as you can get. It's an epic hard sci-fi about a guy who was programmed to be a conqueror from birth and then suddenly becomes unprogrammed and how he deals with his conscience after killing billions of people while still keeping it together to save the galaxy...etc, etc.

*edit* And the scene where he becomes unprogrammed is one of my favorite parts in any book...ever. Total testosterone and machismo overload.

I'll second the Hyperion Cantos. And yes, by Dan Simmons.

I'm more into fantasy. But have read a few SciFi books like Ender's Game. My brother gave me Hyperion for Christmas '08 and I couldn't put it down. As soon as I finished it I went out and bought the rest of the books in the series.

Also if you haven't read Ender's Game I recommend that also. The books in the series after Ender's Game are hit and miss. While I liked Ender's Game better, I did like the rest in the series. But I also know people who liked Ender's Game but didn't like the rest of the series.

My fav little sci-fi book of all time is "Orphans of the Sky" by R. Heinlein, however as a close second, I'd like to recommend "Enders Game" and "Enders Shadow" (don't like the rest of the series as much, and both of these can be read as stand alone books) by Orson Scott Card
