Subject: Got my cooking textbook...
Looks awesome from a skim through. Decent recipes, but a ton of background information on the food science, history, and basic skills.

First up for a try is a simple shrimp dish. Basically marinate shrimp, place half a basil leaf on it, wrap in prosciutto and grill. I'll let you all know how it goes...

Not the prettiest wrapping job, but they taste pretty good. Freaking prosciutto is expensive though. Is there a domestic product that's basically the same? I figure bacon would work well, but not the same flavor...

I picked up Julia Child's cookbooks and I've made roast chicken and omelettes now...and I'm getting pretty darned good at flipping the omelettes! But I'm always looking for good references and resources.

My book is called "On Cooking" (not to be confused with "On Food and Cooking").

I'm not training to be anything in terms of he culinary world. I just wanted to get a single book with a lot of recipes and a lot of background information such as the propper to cut things, what the different cuts of meat are, how to tell if an egg is fresh. Basically just liked it because it was a culinary reference rather than a book of recipes.

Anyway, crepes round 2 tonight. Cooking them tonight so I can have them for breakfast tommorow without an enormous investment of my morning. Hopefully this one goes better, but the batter certainly looks better so I have hope...

The second time went better. I made a larger batch of batter (enough for about 8 or 10 tries) and came away with 2 decent crepes. I'm still having a problem with sticking; I think I'll try some clarified butter next time I get a chance...

Try a better pan ... that is a huge problem when people try to make them is the pan is not suited for it
