Subject: Pork roast has led me to wonder about a pressure cooker
I usually sear the butt in cast iron and then steam cook it in a pot on the stove. It comes out really good and tender. Having used this system for a while, I got to thinking of getting a pressure cooker.

Anyone here try that for meats? Suggestions/warnings?

i love my pressure cooker

only once have i had a major blow out and blew beans thru the vent :P


it makes even the toughest piece of meat so tender.

From an episode of Chef at Home (I believe it was), the newer pressure cookers are built in such a way that you shouldn't have to worry about accidents.

I just cooked a loin in the oven.

It was smothered in onions a few mushrooms tomato sauce a bit of basil and black pepper.

I used my fish poacher .

It turned out perfect the meat is so tender and as white as veal.

The sandwiches just melt in my mouth.

But pressure cookers are great to speed the cooking process reducing time from a couple hours to minutes.

Oh, I love my pressure cooker!! Awesome to use for stews especially, and my favorite, mashed potatoes in 10 minutes! I tend to use the crock pot for roasts as it leaves things *really* tender, but sometimes I won't think about making something until it's too late to use the crock pot... hello pressure cooker!

Get one, learn to use it, and I think you will also enjoy it!
