I like making things from scratch (cookies, bread, pie crust, etc) but one thing I've never made from scratch is muffins.

It's not because I've never found a good homemade muffin recipe, or anything like that. It's just that I like the mixes I grew up on, and they are nice and easy to prepare in the mornings, especially when I'm in a hurry (always!)

But I don't like the fact that they're really short on some nutritional stuff, like fiber, unless you buy the super-expensive Fiber One brand (I won't- holy crap @ those prices). I've successfully doctored my pancake mixes, so I decided to try doctoring my muffin mixes too.

I gathered together my muffin mixes (three different types) and my "doctoring" stuffage (unprocessed wheat bran- I like Hodgson's Mill, and a bottle of wheat germ) and went to town.

Each of the mixes asked for a certain amount of liquid (from a halfcup to one whole cup, depending on the size of the mix pouch/box). What I did was I added that much wheat bran, and half as much wheat germ, to the dry mix before adding liquid. So for the small pouch that needs half a cup of milk, I stirred in half a cup of wheat bran and 1/4 cup wheat germ before adding the milk. I had to add just a small splash more milk, but just barely. I did the same with the other mixes, and then I fed the muffins to my guinea pigs (aka the husband and kids...and me too).

Delicious! Everyone wolfed them down, no one could tell a difference...not even me, and I knew what was going on.

So more fiber and more vitamins and such, and still the same amount of convenience. Yummy!

did it make them taste more....morrrrreee...nutty like in flavor?

were they heavier? denser?

Mmmmmm chocolate chips love

I didn't notice a taste difference at all, Foxy, but that doesn't mean someone else wouldn't notice. The muffins were just a *touch* denser, but they weren't bricks by any means.

I take about 2 parts of yellow cake mix and 1 part of butter (unmelted). Mix them together until crumbly and sprinkle on top. It gives a nice texture & slight crunch on top.

I've found that if you add a tad more liquid to ANY muffin mix, you can prepare them as if you were making pancakes. Everyone I've ever made them for loves them.
