WTF? I can't create a poll?

Anywho:

1) Pouring the sauce on top

2) Mixing the sauce in the pasta, then serving

depends on if its just me or i have company

in any case, leftovers are mixed together then refridgerated.

what i prefer is to add the pasta to the sauce and cook a tad more, add parm then serve family style.

oh, and check to see if you already have 5 polls still open, if so, delete them.

I like it over the top.  It seems like if you mix it in, the sauce gets absorbed too fast.

Yuppers. That's how grandma did. That's how mom did it. That's how I do it.

I asked around work, and apparently I'm in the minority.

I don't even mix it for leftovers.  The pasta soaks up all the sauce and I don't like it that dry.

EXACTLY

Pasta is much much better when the sauce isn't soaked up into it. It also seems to be more mushy and gummy when the sauce is mixed into it.

I like for my pasta to be drained very well before putting the sauce over it too.

I always add a little water or stock when reheating to keep it moist but I prefer mine mixed. I think the flavor is better.

Add the pasta to the sauce.

I hate adding oil to my pasta and I dont like it all clumped together...and it's not like we ever have leftovers with teenagers in the house.

Same. The pasta absorbs some of the flavour of the sauce and everything just tastes so much better.

I like sauce poured over just before serving. Wife likes sauce mixed in.

Not a big deal either way.

don't think that is the reason

I like to turn the heat down when it is still a lil undercooked...what's that word...aldente(sp?).

I rinse mine too, don't know if everyone does that or not.

I don't rinse mine because I like to keep the salt and olive oil on the pasta to flavor it, although mine doesn't clump either. Must be the olive oil.

It depends on the type of pasta. For stick pasta, if you add it and stir it - it won't stick or clump. You're supposed to fan the pasta when you put it into the water, not just pull it out of the box and dump it in.

Shouldn't need to put olive oil in your water. Also, rinsing is a no-no. Rinsing removes all the carby goodness off the pasta that helps the sauce stick to it.

I don't need the olive oil, I just like the flavor better with it.

I am talking about the pasta getting sticky when it sits around without sauce on it, not in the pot while it's cooking.

I put the pasta into the condiment when it's just shy of al-dente and cook until it is, add cheese and starchy water from the pot I boiled it in to get it moist enough.

With spaghetti and red sauce though, I pour the sauce over the spaghetti.

I believe it's the olive oil too Silver.

Tastes just as good rinsed as not, to me anyway.

1. Use a large pot with lots of water, way bigger than you think you need. Rule of thumb is about 1 to 1 1/2 quarts water per 1/4 lb of pasta. You want the pasta to cook with lots of room and lots of water. This one’s a biggy!

2. Bring water to a full boil then add a splash of oil and a few shakes of salt. Oil is debatable with some, but I find it does add something to the pasta. Use 1 to 2 tablespoons of salt per pound of pasta (Kosher salt is great). Once everything’s boiling hard, add your pasta and make sure it’s all covered with water. This one’s an important step too, if you add the pasta before the water is at a full rolling boil–you’re not going to get great pasta.

3. When you first add your pasta to the boiling water, stir well to prevent it from sticking to the bottom. Stir again after about 2 or 3 minutes. Do not cover with a lid, keep the pasta boiling in an open pot.

4. Check the instructions on the pasta package for cooking time. Start checking the pasta at the minimum suggested time: take a piece of pasta out and bite into it. If it’s cooked just right, you’ll know it by biting into it–it will be slightly firm but tender (al dente), no crunchy or hard center. Once it’s cooked, remove the pasta from heat immediately. If it isn’t, check every minute or so until it’s ready. Seconds do make a difference and overcooked pasta is why it turns out soggy, mushy and tasteless.

5. Once the pasta is done cooking, remove from heat and immediately drain in a colander. Shake the colander to get rid of excess water, no need to rinse although some people prefer too in order to remove some of the saltiness.
