I'd prefer nothing battered and fried.

Just found out I can actually eat shrimp(previously thought I was allergic) so Im kinda excited! grin

Shrimp Scampi

dip shrimp in flour
mince shallots
mince garlic
chicken stock
unsalted butter

Cook shrimp in some butter on medium heat, remove. Add the shallots, cook one minute, add the garlic, cook another, add the chicken stock.

Reduce until just a few table spoons are left, take off heat and add butter, whisking to incorporate, add the shrimp, give it a few flips, pour over noodles.

I've never measured anything for this, proportions depends on how much shrimp you want to cook. Be careful with the chicken broth, it has salt. Don't add any salt until the very end.

For one person, 10oz shrimp, 2 shallots, 1 clove garlic, 1/2C chicken stock, 1/2 stick of butter. I think.

I don't have an actual recipe.  It's all to taste.

Buffalo Shrimp

Season the shrimp with salt, lemon pepper, onion powder, garlic powder, and chipotle chili powder.  Heat a tiny bit of oil/butter (or use cooking spray) and add the shrimp in a single layer.  Sautee maybe 2 minutes, flip the shrimp, and sautee another minute until they go from translucent to pink/white.  Coat with your favorite buffalo wing sauce.

It's not fried, you never get it hot enough. The flour is just there to soak up the sauce. Leave the flour off if you want.

Fried is when you heat a lot of oil to 375 and put food in it.

I make my scampi the same way as Terminus_Est but with no flour.

nope but Im still trying to stay away from oil/butter all together for the most part. I'm just trying to put alittle variety into my diet since all Im really able to eat meat wise is chicken.

I wonder if I took your recipe and coated it in a breaded substitue, and then broiled it in the oven, wonder how that would turn out.

You could obviously adapt this to your needs, but I always thought this sounded like a good recipe (haven't tried it).

Ingredients
  • 2 pounds (12 to 15 per pound) shrimp in the shell
  • 3 tablespoons good olive oil
  • 2 tablespoons dry white wine
  • Kosher salt and freshly ground black pepper
  • 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
  • 4 teaspoons minced garlic (4 cloves)
  • 1/4 cup minced shallots
  • 3 tablespoons minced fresh parsley leaves
  • 1 teaspoon minced fresh rosemary leaves
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1 extra-large egg yolk
  • 2/3 cup panko (Japanese dried bread flakes)
  • Lemon wedges, for serving


  • Directions
    Preheat the oven to 425 degrees F. Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture. In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined. Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.

    shrimp salad

    boil shrimp for 1-2 minutes in seasoned water (salt, pepper, red pepper, old bay etc)

    add shrimp to salad

    use salt/pepper and lemon juice instead of salad dressing
