Subject: How would canned tomatoes be for making salsa?
was thinking about making salsa for this weekend, but dont really feel like going through the hassle with fresh tomatoes. how would canned tomatoes work for it?

I was thinking the something similar sense Avocado's are on sale at Publix. I am not sure how canned tomatoes would work? The should be fine but I am not very experienced in the Salsa making world. I've only done two batches from scratch.

You would lose a lot of texture with canned tomatoes, but it would still taste pretty similar.

Diced tomatoes should work fine but I wouldn't recommend regular canned tomatoes which are usually peeled. It may not be as fresh tasting but I think the texture would be fine. One thing I see go wrong a lot with homemade salsa is that it is over-flavored. If you're just making a small batch that you are going to eat right away go ahead and season it however you want. If you plan on having some leftovers and eating it throughout the week I recommend making it a little bland, let it sit overnight so the flavors combine well, then season more from there if needed.

gonna make it tonight for the weekend...will probably use 2-3 serrano peppers a couple cloves of garlic some onion of some sort and a tiny bit of cilantro.

Oh yeah....I forgot about the canned diced tomatoes.  I would recommend those, as well, if you're going to use canned tomatoes.  I use the same basic ingredients, but I add a splash of red wine vinegar to mine and/or a few shots of Jalapeno Sauce (kinda like Tabasco).

so i ended up using 1 large can of petite diced tomatoes, drained, and one small can of fire roasted diced tomatoes, also drained. put some in the blender with 2 serranos and 1 jalapeno, and blended until it was all tiny chunks. put some more in with half a vidalia onion 3 and 3 cloves of garlic and did the same.

mixed it all together and it was too watery, so i simmered it down for a bit. added 1/2 more serrano pepper and 1 more clove of garlic finely minced, then cilantro lime juice and salt.


was really good. between 5 people, the entire bowl was gone in 30 minutes.

I don't put mine through a blender or food processor.  To get a little of that feel, I use a small jar of tomato sauce along with fresh tomatoes, onions and jalapeno.
