I made this last night and it was a really good, refreshing salad.

1 - 6 oz can solid white tuna packed in water
1 jalapeno, seeded and minced
1 small red onion, peeled and finely chopped
1 ripe tomato, diced
1 Tbsp fresh cilantro, chopped
salt
black pepper
¼ cup fresh lime juice (1-2 limes)
extra virgin olive oil
lettuce

Drain the tuna and invert it into a small bowl. Add the jalapeno, onion, tomato, chopped cilantro, and salt and pepper to taste, and gently mix together. Sprinkle the lime juice over all, and drizzle with the oil. Serve over lettuce.

It was really tasty.  I used a large can of tuna for the two of us and really didn't measure anything.  We had some left over, too.  I ended up using 3 limes, too, because there just wasn't enough citrus flavor.  Might be good to zest the limes, too, but I didn't think about that last night.

This sounds good - minus the jalapeno's, of course happy

Simple and delicious. I'd stick with tradition and use raw, sushi-grade tuna but that's just my preference.
