cheshire cheese quiche.

Makes 6 servings

2 slices (1/4-inch-thick) pancetta (3 ounces), cut into 1/4-inch dice

1 medium leek, washed and coarsely chopped

1/2 pound cheshire cheese, shredded

1 1/2 cups half-and-half

3 large eggs

1/2 teaspoon powdered mustard

1/2 teaspoon salt

1/4 teaspoon white pepper

Dash of cayenne

9-inch pie crust

Heat oven to 375 degrees.

Cook pancetta in a skillet over medium heat until it begins to render its fat, 3 to 4 minutes. Add chopped leeks and saute until translucent.

Combine cheese, pancetta and leek in bowl, then scoop into pie shell. Whisk together remaining ingredients and pour into pie shell. Cook on middle rack of oven for 45 minutes or until center is set.

I don't bake much, but I like my scrambled eggs with a bit of Southwestern seasoning to them.

Crack your eggs and add a little S&P, cumin and chipotle chili powder.  Before cooking the eggs, saute 1/2 a small onion and 1/2 a jalapeno in a little butter.  Then, add the eggs and scramble.  Add your favorite Mexican cheese when they're just about done cooking.  Serve with a spoonful of salsa and a dollop of sour cream.

If you really want them to be good, add leftover taco meat. grin

fried...hard or soft (I like both)

boiled...hard

I love to experiment with omlets.

quiche...cheese, bacon, peppers, onion...kinda like an omlet in a crust.

I love eggs - especially with this:

Banana Cream Frittata

2 large bananas - thinly sliced
3 large eggs
2/3 c flour
1/3 c heavy cream
3 tbsp sugar
2 tbsp vegetable or canola oil
1/2 tsp vanilla extract
1/2 tsp salt
whipped cream - for topping (there's a chocolate whipped cream available too !)

In a large bowl, sift together the flour, sugar and salt.

In a seperate medium bowl, lightly beat the eggs, Add cream and vanilla and mix well.

Add wet ingredients to dry ingredients and mix well. Fold in banana pieces.

In a large 10" skillet over medium heat, heat the oil. Dollop batter evenly in pan to form 1 large pancake.

Cook three to five minutes until bottom is golden brown. Carefully flip as the frittata can break apart easily.(To make flipping easy: tilt the pan and slide the fritatta onto a plate, place pan over the plate... flip.. return skillet to stove) Cover and cook a few more minutes until other side is golden brown.

To serve, cut into even wedges and top with whipped cream.


This is especially yummy topped with sweetened sliced strawberries.

My wife is the baker. I can do simply desserts and basic breads but I leave the rest to her.

My all time favorite breakfast though is Huevos Rancheros.

Heat a nonstick pan over medium flame
Add a couple tablespoons of your favorite salsa and warm it up a bit
Add a couple beaten eggs to the pan and scramble
Remove from heat add shredded cheese and let it melt while the eggs cool
Serve in a tortilla (jalapeno cheddar tortillas are my favorite) with guacamole and any other veggies you desire, I like green onions.

Mine is kind of similar to Lynea's Except I take Bacon cook that up and set it to the side to drain the grease off and then give it a rough chop. Chop up some Onion and Green Pepper saute that in another pan. Cook the eggs toss the bacon back in and onions and green pepper. Salt and Pepper to taste Serve with Salsa or some other Hot Sauce

I have to admit I also love over-easy eggy sammiches. I usually enjoy it on a bagel with canola mayonnaise with a big slice of tomato, and some red or green onions, and sometimes a little avocado of guac. I like to think the good cholesterol from the mayo and guac balances out the bad from the eggs.

It's a shame your parents lied to you like that.  The yolk is where all the nutrition is and as long as you don't eat a zillion a week, the fat and cholesterol won't hurt you.

Sorry, I can't stand Mayo. sick
besides the fact that it is loaded with way more fat, it just tastes bland. MW gives foods a "zing". My opinion of course.

See, I think Miracle Whip is absolutely disgusting.  I can't eat anything with it in it.

I have a new mayo that I use.  Apparently there are so many hispanics in my area that they're making a mayo with lime juice in it.  It's pretty good.

I pretty much avoid mayo, as well.  I like it on BLT and fried egg sandwiches, but just a tiny bit, not a whole lot of it.

hehehehe i get it --- egg recipe thread ... i have lots


Eggs in a Hole

butter both sides of a piece of bread
use a cup to cut a hole in it
put the slice of bread in a hot skillet with the hole you cut out in next to it (not inside it)
crack open an egg and put it inside the hole you cut out



Egg and Cheesey

butter both side of 2 pieces of bread
drop in a hot skillet
brown it and flip it
put a piece of cheese on both pieces
crack an egg in there
put it together with the cheese in the middle (like a grilled egg and cheese sandwich)



Egg and Cheese Ramen Noodles

boil your water
add your cheese
bring water back to a boil
add your noodles and seasoning
bring water back to a boil
add 1 beaten egg

eat it



Potato, Cheese, and Egg Casserole

chop up left over baked potatos
put them in a baking dish - heat them up at 350 degree's
cover that with crumbled bacon and chopped green onions
beat 3-4 eggs and pour it over the potato's
cover everything with shredded cheese
bake at 350 for 15 minutes (or until cheese is thoroughly melted and starting to brown)
