12 fresh calf testicles, washed and peeled off the outside skin to reveal the oyster
2 eggs beaten
6oz evaporated milk
2 C Bisquick
Salt and pepper to taste
1C Vegetable oil
In a medium bowel, beat the eggs and add the milk. In another bowel, mix the Bisquick, salt and pepper.
Heat the oil to 350 in a deep skillet.
Dip the oyster n the egg and milk mixture, then in the Bisquick. Drop into the hot oil and fry until golden brown.
Drain on paper towels.
The oysters are not very big, so two per person along with scrambled eggs and hash brown would be just about right.
They taste like chicken gizzards in case you're wondering.

I love chicken livers on toast with a creamy gravy over the top (no sick joke this time).
When done right, chicken gizzards are my all-time favorite organ meat. There were so many fights when I was growing up over who got the gizzard. Unfortunately, many cooks turn them into a rubber grommet by over-cooking them or using too high of a heat.
