I'd probably cut it into cubes, sautee it with onions, garlic, and mushrooms, and then make a red wine gravy. Throw in some frozen peas until they heat through just at the end, then serve over no-yolk noodles and top with a bit of parsley and chives.

Put it into a crock pot and dump one package of Onion Soup mix on a 3 lb roast. Do not add anything else. Cook on low for 12 hours. Shred it and serve it on hard rolls. It is fabulous and easy. You could mix some BBQ sauce at the end.
