One of my best friends has 3 kids at home, she calls me upset alot because she claims she has no food. I know for a fact her mom will buy her groceries, and that she does have at least a bit of food, I think what the problem is, is that she just doesnt think she can cook anything more than ramen noodles and mac and cheese. Both have good merits, but neither of those are anything you want to feed continually to 3 little kids.

So, I'm going to buy her a crockpot, and I'm going to make her a "Busy Mommy Cookbook". I'm also going to take her grocery shopping, She's super picky, no onions or tomatoes, but I'm know she can feed her family of 5 far better than she thinks she can on a budget.

Quick Minestroni
serves 6

1 onion chopped (can be omitted since she doesnt like them)
1 can stew tomatoes (or 1 cup of pasta sauce since she doesnt like tomatoes)
1 bag italian style frozen vegies
1-2 cans kidney beans or garbanzo beans or any kind of beans really.
2 bullion cubes
2-3 cups of water
8 oz noodles
1-2 teaspoons Italian seasonings, or oregano and basil, some garlic or garlic powder, whatever seasonings you like.

Saute onions in a little bit of oil. Toss in tomatoes, frozen vegies, kidney beans, bullion cubes, water and bring to a boil. Add noodles and cook until tender. Serve with some french bread.

Very cheap and very quick and not too bad for you.



Black Bean and Salsa Soup
serves 4

Ingredients:
2 (15 oz) cans black beans, drained and rinsed
1 1/2 cup vegetable broth or chicken broth
1 cup chunky salsa or taco sauce type stuff.
1 teaspoon ground cumin
1/4 cup sour cream, optional
2 tablespoons thinly sliced green onions, optional

Directions:
In a food processor or blender combine beans, broth and cumin. Blend until fairly smooth

Heat bean mixture in a medium saucepan until thoroughly heated. Serve with a dollop of sour cream and a sprinkle of sliced green onions.

I served this with Bisquick biscuits with some cheese and chipotle powder added to the mix.



Lentils and Rice
serves 4

Ingredients:
1 Tablespoon Oil
1/2 cup thinly sliced carrots
1/2 cup dry lentils, rinsed
1/2 cup sliced green onions
1 1/4 cup chicken broth (or vegetable broth)
1/2 to 3/4 cup instant brown rice (whatever makes 2 servings of your brand. Do not use boil in bag)
4 oz (1 cup) shredded cheddar cheese

Directions:
Heat oil in a large skillet over medium-high heat. Add carrots, lentils, and onions; cook and stir for 3-4 minutes or until vegetables are crisp-tender. Add broth; bring to a boil. Reduce heat to low, cover and simmer for 5 minutes. Add rice; cover and continue to simmer for 10 minutes or until vegetables are tender and liquid is absorbed. Fluff rice with fork. Remove from heat; sprinkle with cheese. Cover, let stand for 1-2 minutes or until cheese is melted.



Potato Soup
serves 6

Ingredients:
6 pieces of bacon cooked
1 1/2 teaspoon olive oil
1 cup onion, chopped
1 cup celery, chopped
1 cup carrot, chopped
1 tablespoon garlic, minced
1 teaspoon crushed rosemary
6 cups chicken broth
6 cups potato, cubed
1/2 teaspoon cayenne
1 cup shredded cheddar cheese


Cook bacon until crisp in a 8 quart saucepan. Drain bacon and wipe pan clean.

Add olive oil, onion, carrot and celery to pan as they are cut. Saute until onion is soft but not browned. About 3-4 minutes. Add garlic and rosemary and saute for 1-2 minutes. Stir in chicken broth, potatoes and cayenne. Bring to a boil, reduce heat and simmer until potatoes are tender. About 10-15 minutes. Mash vegitables with potato masher or put about 1/2 of the soup in a food processor and blend until smooth. Stir in cheese, heating until just melted, do not boil. Chop bacon and add to soup. Serve at once with a loaf of crusty bread.

All very cheap. All can be doubled and put in the freezer for a date.

pork chops in brown gravy

brown the chops, put in teh crock, add veggies of your choice if you want any. i do onions and carrots, tad bit of garlic. she can pick and choose. add a cup or 2 of water. salt, pepper.


cook on low 10 12 hours.


turn on high and add your slurry of water and self rising flour to thicken and make gravy.


eat after it boils a tad to thicken

most pasta dishes are cheap and easy, like spaghetti with (insert sauce here), lasagna... nowadays with lasagna you can use the no-boil noodles even.

I love breakfast for dinner too, it's easy, make eggs, use Bisquick and make pancakes, that sort of stuff.

other things...roasting chicken or a turkey breast is dead easy or you can pick up a cheapo rotisserie chicken at the supermarket, pair with a random starch (rice, pasta, potatoes) and maybe roast some green beans or steam some random other veggie to go with it.

stews are easy and filling, they taste good and they can be pretty nutritious. start them up and forget them for a while, works well when you have small kids to look after.

or broil up/pan-fry some fish.

tuna salad is also super cheap and super easy and tastes great.

seriously your friend should just go google some recipes, the internet is loaded with easy recipes for dinner.

edit: forgot another favorite, pita pizza, get a bunch of pitas + tomato sauce + shredded mozzarella and whatever toppings you like, then the kids can help assemble their own pizzas. heat them in the oven for a little bit until the cheese melts. really hard to screw up.

A couple of things I'll make for a quick dinner are quesidillas (sp?) or hot ham and cheese sandwiches. Add a veggie and maybe a salad or applesauce and you have a quick, easy dinner.

For the quesidillas, just cook some boneless, skinless chicken breasts your favorite way (I usually boil them in chicken stock until done), cut into bite sized pieces and layer with shredded mozzarella and cheddar cheeses on a flour tortilla in a pre-warmed skillet. Place another flour tortilla on the top. Warm on one side till cheese starts to melt and tortilla begins to brown, then turn over and do the same on the other side. Use a pizza cutter to cut into pie shaped pieces and dinner is done. The kids love them and they contain ingredients that most every kid likes. You can even keep cooked chicken on hand in the fridge or freezer in Ziploc bags for times when you're in a hurry and don't have time to cook them.

I'm sure you can show her how to make hot ham and cheese. It's one of Aime's favorite dinners.

They also make microwaveable chicken nuggets that only take a minute to make. Add a veggie and some fruit and there's another quick dinner that the kids love.

These are two incredibly simple meals that require very little effort.

Yellow Rice and Hamburger
1 pkg Vigo Yellow Rice
1 lb. ground beef
1 small can green peas, drained
salt & pepper
onion powder (optional if she really hates onions)
garlic powder

Cook the rice according to package directions - this entails bringing water to a boil, dumping everything in the water, stirring, turning down the heat, putting a lid on the pot, and setting a timer for 20-25 minutes. It's pretty difficult to screw up.

In another pan, brown the ground beef and season with salt, pepper, onion powder (optional) and garlic powder. When finished, drain any remaining fat and then stir in the peas.

When the rice is done, combine the ground beef/pea mixture with the rice and you have a really simple meal. I like to douse mine with Tabasco, but that's probably too hot for little kids.


Scalloped Potatoes and Hot Dogs
1 pkg. Scalloped Potatoes
1 pkg. Hot Dogs

Prepare scalloped potatoes according to package directions (involves boiling water and pouring it on package ingredients). Use half a pack or more of the hot dogs; cut into bit size pieces and add to the potato mixture. Place in 450 degree oven and bake for 20-25 minutes.

Add a cooked vegetable or apple sauce as a side and you've got a complete meal.

We do this, but instead of chicken, we open a can of refried beans and spread it on. This is one of my "Food storage recipes", because you can make it using all stored food, if you like. My kids like olives and mushrooms on them, and we use frozen shredded cheese. In the time it takes the frozen cheese to melt, the tortillas get lightly browned. If I have some, I'll toss some Romaine lettuce on there too. A bit of salsa might be good. I've even done PB&J, in a pinch. wink

My 6 year old daughter calls them "Burrito Pizza".. she loves that we cut them into "tiny pizza slices".

crock pot beef vegetable soup

1 pound ground meat or stew meat (chopped into very small chunks)
1 or 2 bags frozen mixed vegetables
beef bouillon
2 quarts of water

add spices as desired (i like to add onions and garlic)


stick everything in a crock pot, cook it for 10-12 hours
salt and pepper to taste

----------------------------

granny's pot roast

2-3 pound pot roast
5-6 potatoes (diced)
1-2 packs of fresh whole mushrooms
1/2 pound carrots (sliced)
1/2 bundle of celery (chopped)
garlic powder
3 tablespoons worchestshire sauce
1 tablespoon parsley
salt
pepper
(optional to add onion ... it should disolve by the time it is fully cooked)

brown roast in dutch over with 2-3 tablespoons of oil

add enough water to submerse the roast
add worchestshire sauce, parsley, salt and pepper to taste
-- boil on stovetop for 2 hours

add everything else ... cook until roast is super tender (almost fall apart)

--- variation #1, add 1/2 cup white wine after browning the roast
--- variation #2, add 1/4 cup balsamic vinegar after browning the roast (doesn't sound good, but it is)

-------------- even though it has potatoes in it, it also tastes good over rice

they aren't 30 minute recipes, but they are things you can walk away from for an hour or two if need be

Shaggy just reminded me that I have a quick recipe for vegetable beef soup.

Vegetable Beef Soup
1 lb. ground beef
1 or 2 onions, chopped
2+ cloves of garlic, chopped (I use 6, but I love garlic)
1 bay leaf
2 cans mixed vegetables
1 can diced potatoes
1 can white kidney beans (aka cannellini beans)
1 large can petite diced tomatoes or crushed tomatoes
1 carton low sodium beef broth
2 tbsp. olive oil
salt & pepper
chipotle chili powder (optional)

Add the olive oil to large soup pot or dutch oven and place it on medium to medium high heat. When hot, add the onion and garlic and sautee until translucent. Add the ground beef, breaking it apart as it browns, and add salt and pepper to taste. Once the meat is brown, add in all the veggies, the beef broth, and the bay leaf. Season with salt and pepper to taste. I add about a tablespoon of chipotle chili powder, but that's optional. Bring soup to a boil, lower the heat, and let cook for about 15 minutes. Serve with bread and butter.

homemade chicken noodle soup

1 pound boneless skinless chicken thighs
2-3 carrots slice
1/2 bundle celery chopped
1 medium onion chopped
fettuccine noodles
parsley
32 oz Chicken Broth (i like Swanson)
garlic powder
salt pepper


cut the thighs into small pieces

put everything into a pot and add enough water to cover everything and make it soupy ... boil it until the meat becomes tender

15 minutes before serving ... add in your fettuccine noodles

it is awesome ... flavored fettuccine noodles are good too ... like lemon-pepper happy

Take a can of refried beans.

Stir in 1/2 C olive oil. You want a paste so you can add more to make it thinner if you want.

Add 1t garlic powder, 1/2t salt, 1T cumin. Stir it all up.

Adjust seasoning. Add more salt if it needs it or more garlic powder or more cumin.

Cover and let sit in the fridge for one hour or overnight.

Smear on a flour tortilla. Serve with salsa if desired.

This also makes a hell of a good bean dip for chips.

Yellow basketti

brown 1/2 pound of ground beef/turkey/chicken with about a 1/4 of an onion per box of mac and cheese. make noodles as directed on box drain hamburger and add to mac and cheese.

add one can of chilli per box of mac and cheese

add one can of tuna per box


Easy peasey stroganoff

brown ground meat with 1/2 onion per pound of meat. Season with salt pepper and garlic POWDER never use garlic salt yuck! after the meat is done drain it and add one can of cream of mushroom soup per pound of hamburger. bring to a simmer and let bubble while making the noodles. this is also the time to add more mushrooms or olives if you like them. Cook egg noodles. when the noodles are done remove sause from burner and add 1/2 container of sourcream per can of soup stir well and pour over noodles.

easiest ever meatballs

equal amounts of ground beef and sausage mix together then add one egg per pound of meat. dice a 1/4 onion add to meat. start with about 1/2 cup of Italian bread crumbs keep adding until no visual moisture from the egg/eggs can be seen. Brown on all sides in a skillet then turn down cover and let cook for around 15 mins depending on the size you made the meat balls. add to sketti sause, or slice in half, heat a jar of marina sause, split hoagy rolls lightly butter and toast under broiler, add halved meat balls a bit of sause, sprinkle grated monzarella retunr to broiler until cheese is melted.

Easy chicken strips:

Buy the prefrozen thin chicken breasts. While still partly frozen slice into strips. let finish thawing then dredge in a beaten egg then Italian bread crumbs cook in a moderately hot skillet until brown on both sides. Turn down heat and cook until no pink can be seen when cut open. Lay a slice of mozarella cheese on each and leave in pan until cheese melts. You can also leave them whole but kids seem to like them better when they are in strips. you can also omit the cheese.

For regular chicken strips cut as above only dip into egg and then four in which you have added, paprika, garlic POWDER. salt pepper and a bit of cayene pepper (more for adults) fry these in about an inch of oil.

Lemon chicken that kids love!

marinate chicken legs in bottled lemon juice I use about 1/4 cup per 6 legs put the lemon juice in a zip lock bag, add salt pepper, garlic powder. If you have lemon pepper use that in place of the pepper. let marinate in the fridge at least an hour. preheat oven to 350 drain legs and bake for 30 mins check the fattest leg for doneness. cook longer if needed. you can also use wings, thighs adjust the time cooked a little less for wings a little more for thighs.

Terriyaki chicken, follow directions above only when you drain the chicken dont drain in completely. I also will add a small can of chunky pineapple after I have partially drained the chicken. When cooking for adults I also add strips of bell pepper but kids seem to hate them LOL!

Stuffed baked potatoes.

Bake as many potaotes as needed to serve 1/2 potato per person being served. While potatoes are baking brown 1/4 pound per person pork sausage with 1/4 onion per pound of meat. When potatos are done carefully slice in half length wise. scoop out the cooked potato leaving a bit along the peel to help them keep their shape. Put the cooked potato into your mixing bowl and mash with a bit of butter and milk until creamy. Add to potatoe mixture 1/2 8 oz container of sour cream per 4 potato halves, 3 chopped green onions, a sprinkle of garlic powder, salt, and pepper. stir with a spoon. carefully put a layer of potato into the bottom of the peels, then add a layer of meat, grated cheese, then potato, and meat again. return to 350 oven for 15 mins to reheat. Sprinkle with grated cheese and more green onion or chives, then back into the oven until cheese melts. You can also add cooked chopped bacon when you do the meat layer and also as a garnish. grankids love these!

tacos are easy and if you make them into nachos kids have an easier time eating them just layer chips with cooked meat heated beans, spinkle with the rest of your taco fixings.

Hot Dog surprizes (another of my kids/grandkids favs) on a night when you are making mashed taters make a double batch. The next night make these:

preheat oven to 375

split a hot dog length wise. place on a cookie sheet. completely cover with mashed potatoes. put in oven and bake for 20 mins. remove from oven and cover with grated cheese then back into the oven until cheese melts. (anyone remember flying saucers from school? Bolgna with a scoop of mashed taters and then cheese on top)

Hot dog kabobs

cut hotdog into bite sized pieces (for wee little ones I do not give them the kabobs as I slice the hotdogs into half circles after they are cooked. 2 inch slices of bacon

Thread onto skewer a chunk of pinapple, a chunk of Hotdog, pineapple a piece of bacon folded over until you have 4 of each. after I put them on the skewers I cut off the sharp end of the stick for kid safety. broil until bacon is done. older kids love helping make these. Dont forget to soak the kabob sticks! You can omit the bacon if wanted.

The next recipe takes a bit of work but are another hit with kids.

Lumpias: (sp)

dice potaotes into 1/4 inch cubes fry
brown ground meat with 1/4 onion per pound of meat. until crumbly and no pink remains.
when potatoes are done add in the ground meat.

have a small bowl of water ready and a package of eggroll wrappers. (even better if you can get lumpia (sp) wrappers but they are hard to find)

place wrapper on waxed paper put a heaping tablespoon of the meat mixture about 1/4 the way up the wrapper. with your finger lightly wet all edges of the wrapper. fold up the side closest to you, then fold each side in, then roll up. make sure you seal the final edge with a bit of water.

at this point they can be frozen so when I make them I make a huge batch.

Heat about an inch of oil in a heavy pan (I use my cast iron pan). Fry until brown on all sides. serve with lots of ketchup. Be very careful as the centers of these can be very hot for little ones. You can add grated cheese, bell peppers if you want. if you freeze them you can cook them directly from the freezer but be careful they tend to spatter more. I cook them at a bit lower temp when frozen.

Apple pies the kids way.

peel and slice apples. Toss with a splash of lemon juice, brown sugar, cinnamon or apple pie spice. Optional raisins.

lay out your egg roll wrapper. lay 2 apples slices on the wrapper roll up as described above and fry. These can also be frozen before cooking.

Ok I am brain dead now if I think of some more off the top of my head I will add thm later.
