Subject: Kraut anyone????
My husband wants me to try to make this homemade this year. I've searched the net and found a couple recipes, thought I'd try here, i love this board lol.

I've got lotsa cabbage to use, it grew like crazy this year! grin

I'm gettin all confused with the recipes, some say cook it, some say cut it up and toss it in a jar lol, I'm all for simple, but about 1/3 of what I've found doesnt list time needed to ferment.

Ok, what's kim chee? I've never heard of it!

Kimchi is basically rotten cabbage. I'm told if you can get it past your nose that it actually tastes good. I can't get it past my nose, however.

My mom made it like this site says but never added anything else like they suggest: http://www.kitchengardeners.org/sauerkraut.html but this is a pretty good guideline for kraut making.

It's pretty easy to make, you just have to keep tasting it till it is right for you. My mom also canned hers because when she made a crock, it was a LOT of kraut.

more or less what we do. think we leave ours to sit for ~3 weeks. when it is ready, we cook it then can it. usually try to do enough for the entire year at once.

Learn something new everyday. I always assumed they added vinegar to cabbage to make kraut, just to learn it's nothing more than salt water and fermented cabbage. Kraut is more like kimchi, except the latter has more flavorings added.

My mom used to make kraut. She'd keep it in the basement and the whole house would smell like kraut. sick It's just not something I've ever been about to like.

Would be interesting to try. Not sure I could get past the smell sick

I love kraut in moderation we have it about 3 times a year.
