Any one have any favorite recipes ? I usually dose the boil water like I would for dirty rice.

I am one of the rare people who really does not care for rice in any form UNLESS its rice pudding lol. My sister has an awesome wild rice recipe (according to all the people who eat it and rave about it) I will try to get it from her.

I don't do anything complicated with mine. Except instead of using water, I'll use chicken broth instead. A couple of drops of sesame seed oil is good too.

But I rarely eat rice straight as a side dish. 95% of the time it's with some type of bean. Those Caribbeans' do some good things to rice & beans, particularly the Dominicans. They cook their beans with a sofrito (a spicy sauce) and then mix it up with the rice (about 2:1 ratio of rice to beans). Very flavorful. Recipes on the sofrito vary wildly. Different countries have different preferences. And families hold on to their recipes as closely guarded secrets sometimes. But the one I like is:

1. Grind a small bunch of cilantro (some use culantro) in the food processor with a bit olive oil. Set aside.
2. Saute a minced, large onion until translucent.
3. Smash up a head of garlic and add to the onion. Cook for 1 minute.
4. Add 2 tbsp ground coriander
2 tbsp oregano
1 tsp thyme
Cook for another minute.
5. Add the processed cilantro.
Add 2.5 cups of vege broth.
Add 12oz can of tomato *paste* (not tomato sauce).
Bring to a boil. You're wanting the consistency of spaghetti sauce. If too thick, add more broth. Simmer for about 1 hour.
6. Remove from the stove and let cool. Freeze the sofrito in ice trays.

When you cook up a batch of beans & rice, add several of the sofrito cubes to the beans when you cook them.

Yes it is often sold as Wild Rice.

My point is does any one have a direction to run with this other than a traditional rice recipe. I usually do a sort of dirty rice with it which is ok with the nutty flavor it has but it always seems to lack something.
