    Fourth of July wilted slaw.

    1 Cabbage
    1 lb. Bacon
    1 or 2 onions
    about 1/2 cup vinegar
up to a Table spoon of Sugar
    Salt
    Pepper

Shred, slice or Julienne the cabbage in to a large bowl
Dice the onion(s) and slice the bacon in to bit size bits
Fry the bacon down and remove from the pan sprinkle the bacon over the slaw then add the onion for a minute or two and lightly saute the onion in the bacon grease. Add about the same amount of vinegar to the onion as there is bacon grease while it is still hot. Add sugar, salt, pepper to taste. Then pour the hot vinegar/oil dressing over the slaw and toss.

I like mine a bit sour and don't use a lot of sugar.

    Patriotic Jello Poke Cake

    White Cake Mix
    Blue jello
Red jello (strawberry is yummy! raspberry is too!)
    Cool Whip
    Fresh Blueberries
    Fresh Strawberries, cut in half

Bake the cake as directed, in a 9" x 13" pan.

When cake is ready to come out of the oven, make the jello as directed on the box. Once cake is out of oven, poke it with holes (either using a large fork, or I use the handle of a wooden spoon). Poor the jello into the holes (I try to do one row of red, one row of blue, and alternate colors) and chill cake for about 3-4 hours, or even overnight.

Frost cake with Cool Whip. Use strawberries for lines of the flag and blue berries for the blue star portion of the flag.

I make this every year, and its so good!

    I guess mine lacks blue.

thinking May be a bit of cooked and chilled and diced blue potatoes as a garnish. Or perhaps some blue corn tortilla chips crumbled over it.
