Look into buying the King Arthur Flour Baker's Compendium. That's where I get almost all of my pastry and bread recipes. It's a HUGE book with easy to follow instructions and pictures that show how to do stuff as well as how NOT to do stuff.

American Loaf Bread - Standing Mixer Method

INGREDIENTS

3 1/2 cups bread flour , plus extra for work surface
2 teaspoons table salt
1 cup milk , warm (110 degrees)
1/3 cup water , warm (110 degrees)
2 tablespoons unsalted butter , melted
3 tablespoons honey
1 package rapid-rise yeast (also called instant)



1. Adjust oven rack to low position and heat oven to 200 degrees. Once oven temperature reaches 200 degrees, maintain heat 10 minutes, then turn off oven heat.

2. Mix flour and salt in bowl of standing mixer fitted with dough hook. Mix milk, water, butter, honey, and yeast in 1-quart Pyrex liquid measuring cup. Turn machine to low and slowly add liquid. When dough comes together, increase speed to medium (setting number 4 on a KitchenAid mixer) and mix until dough is smooth and satiny, stopping machine two or three times to scrape dough from hook if necessary, about 10 minutes. Turn dough onto lightly floured work surface; knead to form smooth, round ball, about 15 seconds.

3. Place dough in very lightly oiled bowl, rubbing dough around bowl to lightly coat. Cover bowl with plastic wrap; place in warm oven until dough doubles in size, 40 to 50 minutes.

4. Form dough into loaf by gently pressing the dough into a rectangle, one inch thick and no wider than the length of the loaf pan. Next, roll the dough firmly into a cylinder, pressing with your fingers to make sure the dough sticks to itself. Turn the dough seam side up and pinch it closed. Place dough in the pan and press it gently so it touches all four sides of the pan. Finally, place dough in greased 9-by-5-by-3-inch loaf pan.

5. Cover with plastic wrap; set aside in warm spot until dough almost doubles in size, 20 to 30 minutes. Heat oven to 350 degrees, placing empty loaf pan on bottom rack. Bring 2 cups water to boil.

6. Remove plastic wrap from loaf pan. Place pan in oven, immediately pouring heated water into empty loaf pan; close oven door. Bake until instant-read thermometer inserted at angle from short end just above pan rim into center of loaf reads 195 degrees, about 40 to 50 minutes. Remove bread from pan, transfer to a wire rack, and cool to room temperature. Slice and serve.



This is the recipe I use for bread. It's the simplest I've found that makes great bread.

Combine:
1/4 C hot water
1 tsp sugar

Add:
1 pkg (2 1/2 tsp) yeast

Let sit for 10 minutes.
Add:

3/4 C condensed or scalded milk
1/8 C butter or shortening
1/8 C honey
1/8 C water
3 C bread flour
1 tsp salt

Knead about 10 minutes, let rise until double in size. Punch down, shape into loaf, let rise until double in size again. Bake at 375 for 25 minutes. Recipe can easily be doubled.

I do mine in on the dough setting of my bread maker, and then take the dough out after it has risen and put it into the pan for the last rising. Works great, and tastes delicious!

I use a very basic french bread recipe.

3 1/4 C flour
1 1/8 C water
1 T salt
1/2 stick unsalted butter
2pkg active dry yeast.

Mix it all up and knead for 15 minutes.

Let it rise until doubled in bulk.

Beat it down, Let it rise again, until doubled in bulk. Let it rise twice.

Beat it down and then put into a loaf pan, seam side down.
let rise one more time.

Bake at 425 18-20 minutes.

Serve hot with lots of butter.

I used to actually measure the temperature at 110 degrees. Now I just make the hot water from the tap go as hot as it will, and use that. It seems to work just the same. wink

Recipe from my Mom.. one of my favorites when I was growing up. Really good warm with butter and honey, also makes fabulous toast spread with some of my Mom's homemade strawberry jam.

Honey Oatmeal Bread

2 C Boiling water
1/2 C mild flavored honey
2 Tbsp butter
1 C uncooked rolled oats
1 pkg dry yeast (approx 1 Tbsp)
1/4 C lukewarm water
4 1/2 - 5 C whole wheat flour, unsifted (can also use regular flour or mixture of regular flour and whole wheat)
2 tsp salt

In large bowl, stir together boiling water, honey, butter, salt and rolled oats. Let stand for one hour. In small bowl, dissolve yeast in lukewarm water. Add to oatmeal mixture. Stir in flour one cup at a time and beat well. Turn out onto lightly floured surface and knead until dough is smooth and elastic. If necessary, add enough flour to keep dough from being too sticky. Place in a greased bowl, turn to coat the top and cover with a towel or damp cloth. Place in a warm spot and allow to double, about 1 1/4 hours. Turn out onto floured surface, knead for 1-2 minutes. Shape into 2 leaves and place into well greased loaf pans. Cover and place in a warm spot until almost doubled in bulk (about 45 minutes). Bake at 350 degrees for 40-50 minutes. Tops should be browned and the bottoms should sound hollow when rapped with your knuckles.

Can be glazed with a light coating of honey and sprinkled with uncooked rolled oats if desired.
